- If you like a crispy chicken cutlet, you will LOVE this crispy fish fillet, shallow-fried in a cast iron skillet and fixed up on a soft roll with a Super Special Tartar Sauce. Because Carla loves vegetarians, she shows you how to do this with fish *and* with tofu. Crunch crunch crunch!!

I thought the same thing! I was so. excited! And...you can make "buttermilk" out of non-dairy milk - just add lemon juice or vinegar.
Also, think out that tarter sauce mixture, and marinate the tofu in it for an hour or so - more fish flavor in the tofu.

Check out It Doesn't Taste Like Chicken also. Doing a marinade for the tofu with lemon and miso will elevate it. Also cutting the tofu (not all the way through) on either side, like you see people do those lattice potatoes, will give the tofu a flakey texture like fish. Tofu tip: freeze and thaw it once or twice if you have time. It’ll remove extra water and it changes the texture in a bomb way :)

Carla is such a comforting presence. Due to the pandemic, I work remotely and I’m eating my yogurt & watching her, as if I’m taking my lunch with someone. Also, I’ve been binging some of her old content with BA and she’s always looking out for the meatless eaters, which I appreciate greatly as a vegetarian. Love it!

When my grandmother taught me to breadcrumb fillets she made me keep a 'dry hand' and a 'wet hand'. Use only the wet hand to soak in the butterrmilk - that way over time your wet fingers don't start clumping out the flour or breadcrumbs.

I'm sure you could easily sub the proteins for crispy mushrooms - enoki and/or maitake would be super crispy (read: "crispety chrunchety") with all their nooks and crannies

I respectfully disagree! Carla was one of my favorites beside Brad and Sohla. Seemed to be a favorite of many viewers. Knowledgeable, humorous, and relatable. I'd love to share a drink while cooking with them. Might I add, Carla's amazing ability to stay cool around numerous celebrities. An amazing teacher.

I always feel like I never know when a good cooking tip might pop up even for stuff I don't eat...the triple coating the slabs...my chicken might get fried better the next time I do it!

I made this (with cod). I've never fried anything except an egg. This was EASY and delicious. If you don't fry anything - get some store fish sticks, but absolutely make the tartar sauce.
There were a lot of great people that came from the BA test kitchen but Carla Music is easily #1.

This is my go-to recipe! Delicious every time! When I wasn’t eating dairy, I would just mix my non-dairy milk with a tablespoon of vinegar, let it sit for 10 minutes and voilà 🤌🏾😘

Some furikakes also have fish flakes / bonito flakes! If anyone is looking to make the vegetarian/vegan version of this recipe, make sure to check the furikake you buy (or diy it like Carla suggested) :)

I don't think anyone's ever accused Carla of being shy. Also, I LOVE that she actually said 'tofu has a flavor, but it's mild'. Too many people act like it's this absolutely flavorless thing, but it's not. Great video, and damn glad I was finally suggested one of these (I didn't know there were videos coming out, just occasionally showing up places like BCU).
