OK, this is one of my “Pastry 101 videos”!
Caramelised nuts (or candied nuts) are great as snacks, especially for kids! But they are also used widely as decorations for cakes/cookies etc.
Please enjoy!
▶Candied Nuts◀
Almond or any other types of nuts 125g
Sugar 40g
Water 10g
Butter 5g
① Add water + sugar into the saucepan and raise the temp to 115℃ to make a sugar syrup.
② Add in the nuts and mix well.
③ The sugar will crystallise over the nuts - keep mixing it with your spatula and the crystallised sugar will turn into caramel.
④ Turn the heat off when you have the perfect brown colour coated on the nuts.
⑤ Add the butter and mix well.
⑥ Place it on a silicone mat/parchment paper and let it cool at room temp.
Storage: Can store in an air-tight container in the fridge for a month.

Chef, are the nuts roasted before caramelised?
@@walfredlim2081 oh for these. nope. you don't need to roast them in advance.

I would add sesame seeds with nuts, spices at end with butter as not to burn them cinnamon is great
Amazing recipe so easily explained. Making the nuts has never been soo easy. Thank you soo much. I tried making it and my parents loved it 😍
Thanks for liking
@@HanbitCho trust me it's very good. They loved it they asked me to make more with different nuts. Its their new snack option 😍
I’ve watched a lot of Videos on making these yours is the easiest and best so simple and so good. I like Rachel Ray but she poured her mixture on the nuts and hardly got anything to stick putting everything in pan so much better You really are a great chef. Thanks for the recipe
You are so welcome!
It looks so good.😄
It does!
Thanks! Im really getting into making candy and candied nuts.
okie!
Can't wait to try them
lol

You're welcome!
Thank you Sir😍

Most welcome 😊
Rooting for you Hanbit!
Thank you!
🎉nice presentation 😊from London UK
thanks!
I just used this recipe. The coating will turn out pretty thin. I used it again on another batch but added more sugar and vanilla this time and they turned out super delicious
Great job!
How much more sugar did you add?
@@chrischui I think I eyeballed about 1 tbsp more, but this recipe is forgiving so you can just add more according to taste
@@saltybiscuit6872 thank you do much x
My American friend!
Thank you I try it now amazing super tasty ^^
You are welcome 😊
Lovely🤠💪🏻💪🏻 My favorite!!
Awesome! Thank you!
Thank you enjoyed your video
Glad you enjoyed it
Awesome content Chef 😍
great!
Wow ❤❤❤❤
hello!
Wow 🌹
Thank you! Cheers!
I have tried your method out 2 times now and they always turn out perfect😆😆
These nuts make really delicious toppings🤩
And I didn't have a thermometer so I kinda guess the part 😂just have to wait until it's bubbling and the color is still transparent.
My pleasure 😊 yeah, tbh professional chefs don't use thermometer - don't have time to measure it. they usually do it by eye.
😆😆
Ooohh waoww, going on instincts and experiences i see😁
It was super good
thanks
Hanbit thanks so much for sharing this recipe! I just tried making this with walnuts and they came out great! I live in Canada, can I make this with Maple Syrup and what would the process be?
oh maple syrup..hmm never tried actually!
Thats for speaking to your audience instead of just having background music
yeah
hi Hanbit, this reminds me of " Gebrannte Mandeln' in Germany always during Xmas time, sometimes they add spekulatius spices to the caramelised nuts ! I will try to make this , should i roast the nuts first - if yes how long ?
oh these will go for ages! they simply don't go off!
Love how detailed the show is. Do you use cooked nuts or raw ?
yeah i cook them
Dear Hanbit, Can i use 'dry' method for caramelization instead of water caramelization?
yep.
Just made it with cashew nuts, plenty at home nobody touch, after tried with this recipe my sons all nibble non stopped 😂 thank you so much for the video, and the sweetness is really suits my taste 😊😊
Great 👍
Acabei de fazer com nozes, acrescentei canela e ficaram deliciosas, mas com nozes é bem mais difícil fazer, como é pouco açúcar, custa a pegar no meio delas. Vou fazer com outras nuts depois. Obrigada pela receita!!!
hello!
Beautiful! I've tried a few times and took the nuts out too early, they didn't look as beautiful as yours. Question: if I was to add some spices or sesame seeds, when should I add them?
oh i've never added spices or sesame seeds. hmm you can just think of sesame seeds as nuts so add in at the same time.
I would recommend NOT double/tripling the recipe as given. Or if you do want to do a large batch do it in a frying pan not a pot. The nuts need to have as much surface area as possible to get past the crystal stage. I had to remove 2/3 from the pan and crank the heat to its highest setting while stirring frantically lol! Do it in batches or use a massive sauce pan if you want to do a large batch. I added cinnamon and they taste fantastic. All the extra time caramelizing seems to have toasted them as well and they almost taste like popcorn!
good.
One question Chef, how is the flame in your burner? Is it low flame all the time, medium or do you regulate it as you go?
oh just low flame would work!
Great video! Can I use honey or jaggery instead of refined sugar at the same temperatures?
don't think so.
Hi, do you have to prebaked the nuts before you caramelised?
nope.
Thanks!
If you want to add some seasalt, when would you that?
And keep up the good work. You’re doing great. I love your video’s.
oh at any time. it's up to you!
Thanks for your reaction. I have one more question. Can you caramelise the nuts with honey?
Besides making it easier to separate the almonds, do you think butter might make the food taste bad?
butter works!
I tried doing this with peanuts , when they are crystallized they do not become brown as you showed in the video , and if I raise the heat, the peanuts burn , what should i do ?
need practice!
멋있습니다..👍
감사합니다.
Watching and new fans here
thanks.
Do you know if we can we store pre-glazed walnuts (from grocery) in the freezer? The Fall Season is coming up so sale prices are very low on specialty nuts, but I don't want to stock up if they won't stay fresh for 2-6 months. Even the AI-answer programs are stumped on this question! Thanks.
ah right
I just hope you didn’t erase my perfect genoise!!!!!!
yeah
Hi Hanbit...can use raw or roasted nuts?
yeah
I wanna ask, why not add the nuts once the sugar has been caramelized? Or is that also possible?
that's possible - but you would be in a rush because you need to watch the caramel from being overdone!
@@HanbitCho thankyou for explaining! I wouldn't have thought of it that way :)
Do you toast the nuts before caramelizing them?
oh it depends. usually i do yeah!
@@HanbitCho Thanks for the clarification :)
Do they get sticky after a while? Or does it need to be kept under constant air tight? Please let me know if they are Shelf stablw
yeah after a while.
Can you add other spices if you wanted alittle spice?
yep.
i need to try that,
yep!
Chef the nuts should be baked first or RAW ? Please respond. Thank you
yeah
Hi chef, if my cashews are already toasted can i still follow this recipe or should i make the caramel separately?
yep just go ahead
@@HanbitCho I didn't see your reply til after I made them but my suggestion is to not make them following this method if the cashews are pre-roasted. I made the caramel first and added the cashews during the final minute or so of cooking and they quickly started to over-roast. So I'd suggest only adding them once the caramel is ready
Do I need to roast the almond before coating almond with sugar? Thanks.
Nah its ok
@@HanbitChoThank you for replying.
If you wanted candied nuts but with no caramel flavor, do you just stop the cooking before the caramelization starts?
hmm don't think so.
@@HanbitCho would you happen to have a technique that candies nuts in the same glossy way by with just a natural sugar flavor?
I love your recipe Hanbit but it only allows for such a small amount. Can I double this recipe? Also, once it gets to the stage where it crystallizes, I don’t get much caramelization …what am I doing wrong?
yep you can double it
Can I used Macadamia nuts instead?
yeah
Hello sir is it possible to show us how to do panning at home ...what material is required for it
hmm not sure.
Is this with raw or roasted nuts? Thanks.
it's up to you. doesn't matter.
I planted some hazel nut trees so I can make your chocolate hazelnut pasta a lot more
nice.
Can i add cinammon powder while cooking ?
yep sure.
Did you keep the flame going while stirring? Couldn’t telld
yeah
Chef are you use roasted nuts?
oh usually I do.
I'm ur new subscriber
Thanks for subbing
Where can I buy? I’m living in Thailand?
you need to make it.
your videos are amazing but could you please mention the measuring of the ingredients in the video in details, thanks
it's there
@@HanbitCho it's in the details box and not in the video, in the video you are mentioning the ingredients without the measurements ..say you mention butter but not the quantity in grams
CAN YOU TELL ME HOW MUCH WATER / SUGAR / BUTTER :) ALSO I WANT TO MAKE SOME SPICY ONES HOW DO I DO THAT :)
In the description
@@HanbitCho I'M NEW TO THIS AND COYLDN'T FIND IT :(
Can you please add the measurement in cup and spoon. specially the nuts.

How about a pinch of salt as well?
yep it's good
