  • I unbox and use my new tortilla press to make my very first corn tortilla. There are dozens of videos here on CZcams and the cooks do a much better job than I did. In fact, despite many experiments, I can't get my tortillas to puff up when they cook. However, they still turn out well and I use them for making taquitos and soft tacos. They're delicious! I am so very happy with this tortilla press. I really enjoy using it.
Note: I bought this press with my own money. It is not a product promotion.
For experimenting, I came up with a simple formula to make just one tortilla. I've done it often.
3 tablespoons Maseca corn masa flour
    1 tablespoon all-purpose flour
    1/8 teaspoon salt
    3 tablespoons hot tap water
Blend all the ingredients in a small bowl, then knead until smooth. Wrap in plastic and let rest several minutes, them roll into a ball and press with the tortilla press (be sure to use plastic sheets; I forgot once and made a mess).
Although it might seem like a waste of time to make just one tortilla, it works for me when I want to experiment with something, or if I want a quick and simple snack if I already have some filling prepared that only needs warming. Or scramble an egg with some chorizo and fill the tortilla to make a soft breakfast taco. I've done that several times. A little added cheese (cheddar or Monterey Jack) is even better.

Thanks Mea. I'm enjoying that thing. Maybe it's just the novelty, but I've been using it everyday with my simple little formula to make just one tortilla. Even one with some butter is good for a snack. -Dennis

Also... a really easy way to shred chicken is by using a large bowl and a hand mixer.

I think I'm going to perfect my method of pulsing in the food processor. I don't have a mixer, although I've been know to put a mixer blade in an electric drill and use that. It works. -Dennis

i got excited when i saw the thumbnail because i knew this would mean youd be making some recipes con tortillas hecho a mano for your other channel! herdez is great salsa, i have bought the verde flavor more than once but now ive found a roasted salsa verde they make and its all i will buy (if i want a tomatillo salsa). many years ago i visited san diego and downtown there were a number of competing mexican resturants, they all had an abuela outside with a comal and a tortilla press, enticing you with the delicious smells of cooking tortillas. no one could possibly resist that sales pitch! i love corn and flour tortillas, they all have their own place. dennis i must say i cant believe you bought frozen taquitos, not because i expect you to make your own but i just cant imagine those would be any good. save for a nuclear war where id eat them in an underground bunker, ill pass. that sausage is an interesting alternative to chorizo and i love your appropriate apron! ive always used wax paper inside the press. i hope your use your new press in a number of videos, to hell with being authentic, you are always respectful of cultures you dont fully understand and so long as you do that, i say improvisation is allowed! great video, look foward to the full video on the main channel!

Thanks Eric. Those frozen taquitos were a terrible disappointment. I anticipated some real flavor, but all I got was mostly the taste of flour tortillas. I'm willing to give some products a try, but I mostly end up seeing the importance of making something myself. I'm not sure how I'll cook the corn tortillas for the video. I can't get mine to puff up when they cook. I saw a video in which a guy cooked his in the microwave oven. Yeah, a sacrilege, but I tried it. It works so well! It might be fun to cheat in the video, at least for one tortilla. I'm already thinking of other ways to use the press. You know how to pound a piece of chicken flat for a cutlet. What if I were to squash it in the press? -Dennis

@@MyKitchenVlog one of my favorite channels is called mexi papi adventures. He eats at Mexican restaurants mostly in socal. One of his calling cards is to go behind the counter and grab a fresh corn tortilla off the grill which is big as a balloon and slap it flat with his hand. I’m sure yours did not puff up due to just needing the dough to be tweaked a bit. You are a master cook so I’m confident with some work you will crack the code as you have done so many times before. Keep at it - it was just an off batch, you’ll get it!

I adore taquitos but find the frozen supermarket ones just blah. There's a small Mexican taqueria near me that make deep fried "rolled tacos" that are just fatter, crunchy taquitos. Very good with their spicy red & green salsas. I don't have kitchen counter real estate for a press but I have a small aluminum skillet that would probably work. Thanks for sharing your experience. Fresh is best!

Thanks for the comment. Here on CZcams I've seen many suggestions for using a small skillet or pot for flattening the dough into a tortilla. Here in SoCal we have plenty of Mexican and Tex-Mex restaurants, but so far I've only tried the burritos, which I really enjoy. They make them so large, I usually bring half home for dinner. -Dennis

thanks Dennis for helping me spend money... I'm kidding. Ive been looking at these at the hardware store in amish country. I think I will pick one up next time I'm down there. I'm very interested in the sausage, never heard of it. is it spicy? how would you describe the flavor? great video as always, looking forward to the full recipe video

The longaniza flavor surprised me, and left me a little stumped. It has its own flavor, but it reminds me a lot of chorizo, but not as spicy. I've been cooking it and adding an egg to finish, then using that to make a soft breakfast taco. It's quite good. I'd buy it again. As for the tortilla press, I'm really happy with it. I've been using it a lot. When I do the full cooking I will probably show how I cheat (because no matter what variations I try, I can't get the results the cooks get here on CZcams). Thanks for the comment Trent. -Dennis

It's a little piece of fabric ribbon or webbing attached to the metal zipper pull. I know it shows, but I don't care. At my age, now 70, I don't need to worry about appearances anymore. However, thanks for your concern. -Dennis
