5-10 Chicken Thighs

Tonkatsu:
1/2 cup ketchup
2 tbsp shoyu (soy sauce)
1 tbsp mirin (white wine)

Made this the other day and it was bomb!!! Super easy to follow, nothing hard whatsoever and I pretty much had everything in my pantry! It tasted more like a zippys katsu not L&L but boy it was STILL BOMB!! The katsu sauce caught me by surprise with how good it was and it was even better the next day because it had time to come together. Thanks for posting this video!

I like your sauce recipe. I use a tenderizer hammer to punch the chicken. It makes it thinner and it cooks better and gets more crunchy. But that is only my technique. L&L has thinner chicken at their store.

I make Mahi-mahi the same way. My stepson doesn’t like to eat fish, we tricked him by telling him it’s chicken katsu and he ate it. We told him after that it’s Mahi-mahi and now it’s the only way he’ll eat fish

Make it more better by adding 1/4 cup flour, 1/2 cup cornstarch,1 1/2 tsp salt, 1/4 cup sugar, 3-5 cloves garlic smashed up , 1-2 green onions chopped finely, 5 tbsp shoyu ,( 1 tsp ajinamoto& 1/4 cup Chinese rice wine or sake optional), and 2 large eggs, mixed up to make a marinade for 3-1/2 to 4 lbs of deskinned and deboned cut to flattened chicken thighs. Marinate overnight roll in honey panko flakes cook to lightly golden brown serve chopped how you like over thin sliced cabbage. I got this recipe from an old Filipino guy who gave me a Hawaiian cookbook, it's way better than the l&l cookbook I got later. I wish I could find it again because I lost the Onolicious lip smacking chicken wings recipe, my daughter used to call it, Chicken pow pow. If anyone knows that recipe let me know, it's got ginger marinade that makes it so good.

It helps tenderize the chicken. So it's not a bad idea to do so.

I use vegetable oil. Its up to you. Canola oil works great as well.

Nope, you don't need to marinade or brine the chicken. If you want to use whole wheat flour, you definitely can.

@@someperson9536 No problem. It would work if it's standing alone, but this one is coated in the panko, which gives it that nice crunchiness.
Is that Hawaiian style katsu sauce or Japanese katsu sauce. Japanese katsu sauce taste so different from the katsu sauce you get from Hawaiian lunch plates
Hmmm I think I know what you are talking about. The Japanese tonkatsu sauce you probably had was the Bull-Dog brand. Japanese favor that sauce the most, but I'm not really of fan of it. It was more vinegary and sweeter for me. This sauce is more to my liking and closer to the Hawaiian sauce that I remember.

This is not how l&l makes it they use a batter of eggs milk water pepper salt and Cajun seasoning and mix it till it’s like a little softer then pancake batter and leave it to marinate in the fridge for half an hour

@2:38 the third piece from top down, the chicken katsu is still raw, seriously. I don't think L and L uses egg batter for their chicken katsu, just flour with water.

Just a heads up ! We recently had chicken katsu at L&L in Waipahu....dry, overcooked, and tasteless. Go elsewhere.
