Just bought two Uberti SAA clones from Cimarron, the 7th Cavalry model in .45 Colt and the 5.5" Cattleman in .44-40 WCF. Both four click old model black powder style with the front cylinder set screw.
Love the Old West nostalgia, being a child of the 50s. Had to get the 7.5-inch barrel; the preferred iron for two of my all-time favorites, Matt and Paladin.
Got the .44-40 WCF because I intend to get the Winchester rifle in that caliber since it was the same caliber Lucas McCain wielded, throwing lead down Front Street in the opening sequence of The Rifleman. I already own a Henry Big Boy in .45 Colt. Like I said, I'm a child of the 50s.

That "Hollywood" technique is called "fanning". As you stated, SASS rules prohibit fanning (you can use your support hand/thumb to cock the hammer but your hand must stay in contact with the revolver). I cringed when the fellow drew the revolver and mimicked fanning it.

I order a round barrel from my dealer. However, he ordered the octagon.
I think because instead his head, that is what he liked.

Just so you can worry a little less about that in this instance, we were in a controlled setting where all the guns were tagged for an empty chamber, plus it's hard to see in the video perspective, but I was well behind the barrel of every one of the guns. :-) You are right to want to ensure no one is ever having a barrel pointed in an unsafe direction!!
