    Sicilian Artichoke Casserole
    4 cups artichoke hearts
    2 cups mushrooms
    4 garlic cloves, minced
    2 cup heavy cream
    1/4 cup olive oil
    2 cups Italian breadcrumbs
    1/4 cup Romano cheese
    Salt & pepper to taste
    Preheat oven to 425 degrees
    In a large sauté pan, add olive, artichoke hearts, and mushrooms and sauté for a few minutes, then add the garlic, but do not brown the garlic. Stir in the cheese, salt and pepper to taste, and 1 1/4 cups of breadcrumbs. Reserve the other ¾ cups for topping. The mix will look dry at the point but that is normal. Mix in cream reserving ¾ cup for topping. Place the mixture into a greased casserole dish. Pour the remaining cream over the top and sprinkle with the remaining breadcrumbs.
    Bake for 30 minutes until the top is crispy.
