How to Write with Royal Icing - Intro Class

  • This is an introduction to my approach for writing and lettering with royal icing.
    Writing with royal icing is dependent on: font style, font size, icing consistency, piping tip/size, piping pressure, piping technique. Today, I’ll talk with you about how I approach writing with icing. This isn’t comprehensive, but it’s a great starting point. Once you gain an understanding of how I approach various fonts, you’ll be able to apply the same principles to your future cookies, and over time with much practice, figure out what works best for you.
    If you’re a seasoned cookier, you may prefer different techniques from me. I’m not here to delineate what is “right” or “wrong”; simply here to share my experience.

    Thanks so much for this tutorial, Lisa. I learned a ton. I already have the cake decorating down including advanced fondant work but never took the time to learn lettering correctly. Mine was really terrible. Been practicing and working on it lately. Your tutorial has really helped me a lot.

    Super helpful! Lettering has always been a challenge for me because my hands are unsteady. I've been slowly getting better with practice and using the projector you recommended helps my lettering stay consistent :D

    This is absolutely amazing best video I have ever seen so that little bit that you squeezed out of that bag was just what you had typed on your cookie and now you made it thicker for writing how long do you store your base icing for before you tint it and how long can you store it after you color it for the future thank you again your work is outstanding!! What gel colors do you use for 10 thing I always have such a hard time getting bold dark colors Like black and red

    Danglies -- are serifs, which are the hooks and feet on a serifed font. (Sans-serif is without, of course.) Variable width is a thick-thin transition. :-) #fontnerd Thanks for the video!

    I’ve watched this video several times. Trying to learn to write on cookies. You make it look so easy. Have difficulty w icing consistentcy. Either too thick or too thin. Looking for just riight;)

      Preference plays a big part in this and angles, which side is more comfortable for you, etc- gotta try it all to see what you prefer :)

    Thank you for the video! Quick question, and I’m sorry if you already answered this, but when you make royal icing, do you use meringue powder or fresh egg whites? And do you notice a difference between the two? Thanks!

      I use meringue powder and there is absolutely a difference-- I find that whites tend to result in more color bleed and dries a bit differently.

    Hey Lisa! Do you store your icing in the refrigerator overnight while waiting for the flood to completely dry before detailing?

      Nope, I leave my icing out at room temp in an airtight container for up to about a week. If I know it's going to go longer than that, I throw it in the freezer.

    With regards to a dehydrator, we have one it is called mellaware billing king it only has a fan in it will it work or will it affect the cookie etc

    What happens if your consistency is right, but your icing is not flowing out of the hole you cut, especially for the tiny writing? Could my tipless bags be too soft?

    Hi Lisa, the cookies that you showed to us in the beginning, were they a wet on wet design? How did you get the design of those shapes onto the cookie?

      Hi Bella! Yes, wet on wet and honestly I just eyeballed it and put imperfect triangles down for the terrazo pattern, worked decently!
