Make sure you inject the turkey well, especially in the breast. You can also dry or wet brine then follow the process. i just don't have room to brine in my little fridge.

When using salt for turkey always use 1/2 the amount of salt for the weight of the turkey, For example, if the turkey is 10lbs, use 4 1/2 TBSP to 5 TBSP of salt.

This is my 2nd year frying turkey, last year I used the oilless Big Easy from Charbroil that runs on propane which was good, but cooks @ 10 min a lb. So this year I decided to order the electric indoor xl which took less time to cook & it was crispier than the oilless. I still however use it outdoors because I don't like the smell of cooking oil settling in the house.

its the 10 litre. i think that one dos up to a 25 lb turkey, but i think thats too big for a fried turkey in my opinion.

A good tip to avoid extra cool-down is leave the basket in while it heats
yes, and it coats the metal basket so the bird won't stick.
Instruction booklet shows this: Extra-large capacity with the ability to fry up to a 20 lbs. turkey I own 2 of them and they do not maintain heat or recover the 375° oil temp very well, but I still use it because it's so easy, just cook the bird at room temp only, never cold or even cool, room temp bird is best and super dry bird skin before droppin in oil is best.
