  • Apple Butter - Apple Butter Copper Kettle Recipe. Today we are making traditional recipe applebutter in a copper kettle over an open fire.
    Years ago our families had a tradition every fall to make apple butter outside, over an open fire in a copper kettle. We are continuing that tradition today but cooking down 5 bushels of Goldrush apples into sweet, thick apple butter. These are the best apples for apple butter.
    We begin by peeling, coring and slicing 1 bushel of apples that we cook into apple sauce. We add the apple sauce, 2 gallons of apple cider to the copper pot and then start putting in the rest of the apples. We cook this down until a large portion of water is cooked out and the apples reach a thick, cream consistency. Along the way we add cinnamon, cloves, white sugar and brown sugar for flavoring.
    This is an American tradition. Not only making apple butter but gathering with friends for lots of good food, friendship and spending time together.
    While we try to farm in a modern way with threads of tradition woven in, we also enjoy stepping back and savoring some of the more traditional farm events that made families and communities strong. Today, we took that opportunity and made great memories!

    My grandparents and great grandparents and many friends in Virginia and West Virginia use to put pennies in their kettles when making Apple Butter. This is one of the closest recipes I've seen to theirs. But, they never used Apple cider. They used a starter Apple juice made from the peels and cores. Their recipe is about 143 years old. Still a good recipe for making apple butter.

    Growing up we did this at my Aunt and Uncle’s. I recall there were about 1/2 dozen kettles. Each family had their own recipe and it was all hands on deck stirring all day. As you said, lots of food and fun.

    My family up in West Virginia made this every year, and I was Blessed with the brass kettle. They always put a copper penny in the bottom, and I forget why now, I believe to keep from sticking to bottom.

    Few pointers to any wanting to give this a try. Run apples through a food processor to reduce cooking time. Consistency and color don't change once in the jar. I like apple butter thick enough to stick to a spoon upside down. That takes longer to cook more moisture out. On that note, don't add water. Apples have plenty already. Color is controlled by the amount of cinnamon in there.

      Actually the color is controlled by the amount of sugar and cook time. Cinnamon has no effect on color unless you use “red hots” which turn it red. I have been making apple butter for almost 50 years and have made sugar free by request and it is super light colored. More sugar, darker color. And wow…64lbs of sugar for 5 bushel 😳. We won’t use that much sugar for 2x that many apples! Enjoyed the video!

    Great job. Nothing like good home-made apple butter. But we have never made that quanity before. Looks like the fun and fellowship would be as good as the butter.

    There are some recipes online but not many for this much apple butter. My grandpa made apple butter in a similar size copper kettle with the whole family. I have some pictures of all the grandkids (me) standing around watching our dads take turns stirring. Grandpa died when I was 8 in 1978 and we never made apple butter again. The Kettle was passed around to several family members' houses because I didn't have room but everyone knew it was meant for me. They used it as a flowerpot, yard decoration, and other things (gasp), and the stand was lost. I finally got it back in 2010 or so, cleaned it out, and stored it in a dry place. Now I'm restoring it, fixing the cracks, etc., and will start this tradition again. It's kind of funny how I've always wanted to do this again, even though I don't like apples at all. lol

      @@SheratonParkFarms I wear key, I have worn roundhouse. Key has a big sale at one of there facilities in Ft. Scott KS. About 30 miles away. Get them a little cheaper there.

    Is a cooper cauldron a necessity? I have recently restored a cast iron kettle and curious if I could make it in that?

      I don't think the acid of the apples would do well in cast iron, especially since the cooking time is several hours at a minimum. At the very least, the acid will destroy the seasoning on the kettle. I have not tried it, but I do have a lot of experience with cast iron.

      The most important thing is to be sure the apples will cook up (like applesauce) instead of staying whole like some apples used for making apple pies. Aside from this consideration, I think almost any type of apples can be used.
      If you mess up and get apples that won't cook up, just call it "pie filling" and enjoy the pies!

    You make apple butter the way we always did. I read or see videos that people say apple butter needs further water bathed after it is put in the jars. You don’t do that do you?
