    Tamagoyaki is a type of Japanese omelette, which is made by rolling together several layers of cooked egg. These usually are prepared in a rectangular omelette pan called a makiyakinabe.
    There are several types of tamagoyaki. It is made by combining eggs, and sometimes sugar or soy sauce. Additionally, sake and mirin are used in some recipes.
    Tamagoyaki is served around the world in the form of nigiri, and also appears in many types of sushi rolls. In Japan, it is also served as a breakfast dish and in other preparations. As part of a sushi/sashimi dinner tamago is usually taken as the final course, in essence a dessert bite.
    In Japanese, it's 卵焼き or 玉子焼き, literally "grilled egg", also called tamago or dashimaki (Dashimaki Tamago ダシ巻き玉子焼).

      @@raspberrycrowns9494 Probably because of the fact that the pans can slip from the glove from lack of friction, germs can still stick to the glove from touching several surfaces and the part where you would still have to disinfect the glove anyways.

    Guys it's orange not just because the eggs. Sure the high quality eggs are orange ish in Japan but stil they add the seasoning and dashi which is umami broth so that's basically why. I'm from Japan and I've made this kind of omelette so many times and I'm pretty aware that ingredients are similar for many dashiyaki-tamago

      A very distinctive Japanese taste. Strong dashi, soy sauce, and sweet flavor. It takes some getting used to if you haven't had Japanese food before. The good ones are arranged nicely, and have a bit of chew but are fluffy.

      There is no passion or artistry to this, it is robotic and repetitive. This man does nothing else all day and if he doesn’t do it that way he is fired. This is the food equivalent to tightening the same ten bolts on an assembly line of cars. It is efficient that is all. It takes less time to cook the egg in thin layers than it does to just pour all of the egg in at once and just cook it all the way through.

    what nostalgia. when I worked in Russia in a Japanese restaurant, we did the same thing, but we called it by a simple tomago. We didn’t make it so big, because basically we had them for sushi.

    Thanks for the great video. I bought a tamagoyaki pan when I was in Japan but wasn't too sure of the technique. Now I know. FYI. We used to keep hens in a large enclosure where they could peck at and eat whatever they wanted (as well as the organic chicken feed we gave them). They used to roost in the trees at night. The yolks of their eggs were always much more orange than the ones in the shops. I put it down to them eating lots of green plants, maybe also insects and also that they lived in the sunshine instead of cooped up in cages with artificial light. Don't know if I was right but that's my belief!

      卵の色は鶏の食べているものでも違ってきます。日本の卵は色濃くつくられる傾向にあり、他国はもっと薄い黄色が多いです。醤油のかダシの影響もあると思いますが

    I have watched this over, and over. There's just something so hypnotizing about watching Japanese cook, they do it with such precision and grace its alluring.
    I also tried to cook this, and well let's say it was a cross between, scrambled eggs, fried egg and raw egg. Omg 😂😂😂😂

    I think most Japanese can make it!
    Different families add different seasonings, so everyone makes different tasting tamagoyaki.

      Umami Japanese food has is coming from amino acid from dried Kombu and dried Katsuo fish.
      These two and soy sauce and sugar is Japanese goto source called Tare or Tsuyu.
      All Japanese food has much Umami because of this Tare. Tempura, Soba and everything.
      just like italian uses onion and tomatoes for amino acid.

    A smaller version of this pan is available on Amazon . i saw a demo and bought one , a three egg omelet is great in smaller version and tastes wonderful next I'm trying to add cheese in some form

      John Dripper What makes it a French omelette? The fact that they poured flavored water (“watery vomit”) over eggs that looked like chunky vomit going in and congealed vomit going out. Is that a French omelette? If so I don’t want that or this....
