    When you use bread to clean the dish from sauce, then you're doing "scarpetta". And scarpetta it's what makes you an honorary italian citizen!

    The Italians have the knack of taking a few simple ingredients and turning them into something superb. I have been around the world and there is nothing like it anywhere else. Try if you want, but you will not find any bad food in Italy. The bread is unbelievable, I have tried and failed to duplicate it many times and I have never found it anywhere else...it's a mystery :) You might come across something weird occasionally but no matter....it will still taste superb. Fresh is key...I seen a woman at the market in Naples snurlling her nose up at the best looking artichokes I have ever seen, because the weren't fresh enough lol.

      you're right, simple but above all fresh ingredients and then the gastronomic tradition that should be a UNESCO heritage site. it is a form of popular culture that is difficult to transfer to other countries. It is essential for an Italian to eat well but because it is a habit. Unfortunately in modern life we have to accept some compromises. unwillingly I live in Bergamo, this is a terrible moment, but luckily nothing is missing and good food helps us to live carefree moments ciao

    Hi Mike! This past spring semester in college I studied abroad in Perugia, Italy for 6 months (it’s right between Rome and Florence) and I couldn’t recommend a place more to go for food! I had been to Florence and Rome many times when I was abroad and the food is obviously amazing in those two places but the food in Perugia I think is even more amazing! It’s even more affordable as well. If you ever go back to Italy, which I highly recommend, you should go to smaller cities as well! The food, the views, and the people are truly amazing and it really gives you a feel of the true Italian lifestyle. The region of Umbria has amazing little towns and cities and I would recommend them to anyone if you want to see more of Italy!

    Story time. I went to Rome on a two week college course studying archaeology in 2013. We went to Lake Nemi's caves, and walked for a good four hours. On the way back, I had the best meal ever at a restaurant near a cliff that I don't know the name of and I'm sure I'll never find again. They served the food family-style. When the meal was over, I ordered the Tiramisu for dessert. That was the best thing I have ever eaten, and I'll never find it again.

      Inglonias I studied in Rome for 10 weeks this past sunmer and made my way to Nemi and the surrounding towns. I can attest. The food is amazing

      there's not many restaurants in nemi (or the surrounding area) that are near a cliff. If it was facing the lake (most likely), then that narrows it down to 15 restaurants at most,less then 10 if it was in the centre of nemi

      I put two countries up there almost equally.. Italy and Thailand. Locally sourced in the small laneways and backstreets. So different but each on another level to their neighbours....I say almost because Italy just takes the first spot

    Panini Toscani is amazing! I was there in May. You should have checked out Osteria Pastella. Pasta is cooked inside a cheese wheel of Granna Padano cheese topped with black truffles!!!

    A 67 yo Englishman Londoner of 100% Italian parentage here. I fell in LOVE with Florence when I visited 7 years back and hope, some day, to be able to go back this wretched virus permitting. The food was just outstanding, there is a science to cooking and, coupled with the passion and insistence on quality the locals have, it was a truly winning combination.

    I have yet to try tripe. It's quite popular here in the UK with the older generation, and is usually served with vinegar and stewed onions. We call it 'stewed knitting'. Not sure I fancy our version lol. I like the look of the Spanish way of braising it in paprika and olive oil and tomatoes into a sort of stew. Great vid as always Mikey.

    Love Mike's incredible appetite! I can't believe he ate ALL that in one day. I am watching this 1 year later and I almost cried when I saw beloved Florence, which I haven't visited in years. I miss this most exquisite city, but the food is the BEST ever! He is right, you can't have a bad food day. Impossible in Florence! It has the best food ever! I still remember a minestrone soup I had in a tiny restaurant that looked like Dante was about to walk in. It was so delicious that I have not had one as good since (and I'm talking many years). The food is SO good that it spoiled it for me having Italian food not from Italy, particularly from Florence.

    Thank you for this awesome video. I’m from Florence. I’ve never been there so this was great to see. My grandparents came here in the 20’s and raised a large family. I have fond memories of the good food my grandmother made and home made pasta’s.

    Florence citizen here! Glad you enjoyed lampredotto, it's my favourite😋 I would KILL for a panino al lampredotto.
    When I don't have enough time to have lunch at home I always go and get one to the closest "lampredottaro" that I find (yeah, I think almost everyone in Florence calls the man who makes lampredotto "lampredottaro"😂)
    I remember that once, when I was younger, I was walking with my family in the center of the city and we found a random lampredotto stand at 4 P.M.
    What we did? We literally ate a panino al lampredotto at 4 P.M. . That was great.
    And also almost every saturday, until some months ago, my parents used to go to the market to buy fresh products while I was in school and they used to buy some lampredotto there for my lunch after school! Great times... now I'm on diet so I can't eat it very often😩
    And yeah, the lampredottaro in the Central Market is reaaaally good, but there are many more stands with AWESOME lampredotto. Near Piazza Beccaria, in Via Gioberti, there's the stand called "I'trippaio di Firenze" that makes a great lampredotto. Many of these stands called "I'trippaio di Firenze" are around the city and are so good😉.
    Okay, no jokes now, I'm craving it so bad at 1:28 AM. Gonna get one tomorrow then and screw up diet.
    And ribollita! Probably the best winter meal ever.
    It brings me back to my childhood, I used to eat it A LOT with my grandma. During winter it just warms your heart and makes you feel good, it's a comfortable meal and absolutely great to share with your family!

    Mike just joining a couple dining is so classic. The Italian lady at the panini shop is delightful. The crunch when you bite into it was enticing. Fresh pasta is a totally different flavour and texture.

      @@Erhnam_Djinn soooo... Italian here. In Italy we don't really have the concept of "main course". Most very traditional meal have at least two courses: "primo" (which usually consists of carbs, such as pasta or rice) and "secondo" (which usually consists of proteins, such as meats, fish, cheeses, egg dishes, etc.). The "secondo" is usually served accompanied by vegetables. Typically at the end of all of it we eat fruit. Now, this is only how very traditional meals work, but nowadays people would either eat a primo or a secondo plus veggies and some fruit afterwards. Some exceptions do exist, but are rather rare.

    The Italians make the best tripe dishes. I'm living in Los Angeles now so every Sunday is Menudo Day. Yummy good. And my step mother was Scottish (British) and so made Haggis and other meals based on stuffing an animal stomach full of something. But Menudo and the Scottish dish don't hold a candle up to Tripi Romano (slow braised tripe in a spicy tomato sauce eaten with chewy bread for dipping). The tripe sandwich that you had at the market looked more like the tripe in tripi Romano because it was so clean and white and creamy. It looked delicious. There is just something about the innards (the offal) that a person either loves or hates: and I love it - as it appears you do too. Kidneys, liver, tripe, heart, tendon, sweetbread, hoof/gelatin, pig face, and sometimes brain... are all great. Even Lungs and Spleen are good (a lot of Sicilian dishes where my family comes from, are made with Spleen - and of course, the Scots use lung). Which offal is your favorite?

    Prosciutto and melon is the best thing ever. My mom grew up in Switzerland and I used to spend every summers there, this was a lunch time staple and it was delicious.
