Bake at 325 Deg F for 45 mins
2oz butter
2 tbsp brown sugar
9 pineapple rings
9 cherries
8oz unsalted butter
1 cup granulated sugar
3 large eggs
2 " pc orange peel
3 large eggs
Few drops yellow food colouring or 1/4 tsp turmeric
1/4 tsp cake spice
2 cups all purpose flour
Pinch of salt
2 tsp baking powder
1/2 cup pineapple / orange juice / milk

I have a hack for making pineapple upside down cake less fussy to make and easier to eat. Use crushed pineapple instead of pineapple rings. It doesn't look as elegant, but it actually makes a better topping. Instead of getting pieces pineapple and others with none, or having the ring tip up when you try to cut it, you have an even layer of caramelized sugar, butter & pineapple. I brought this to a potluck and it was a huge hit. The people who have trouble chewing particularly appreciated it
