Easy Slow Cooker Olive Garden Minestrone | Anne Binder

  • I love this recipe!! My entire family loves this soup as well! It is so easy to throw together and then just forget about it for the rest of the day!
    I pull this Minestrone together in the morning and then by dinner time my house smells SO GOOD!!!
    You will love this recipe! It is so easy and so yummy!!!
    I have a very large slow cooker and a huge family. If you have a normal size slow cooker, cut this recipe in half.
    Ingredients:
    6 Cups Vegetable or Chicken Broth
    2 (28 oz) cans Diced Tomatoes
    2 (15 oz) cans White Beans (Cannellini or Navy), drained
    4 Carrots, peeled & chopped
    2 Celery Stalks, chopped
    2 Cups Onions, chopped
    2 tsp. Dried Thyme
    1 tsp. Dried Sage
    3 Bay Leaves
    Salt & Ground Pepper (to taste)
    4 Cups cooked Ditalini Pasta
    2 medium Zucchini, chopped
    4 Cups coarsely chopped fresh or frozen Spinach
    Parmesan or Romano Cheese, grated
    Instructions:
    1. In a slow cooker, combine broth, tomatoes, beans, carrots, celery, onion, seasonings, Bay Leaves, salt and pepper. Cover and cook on low 6-8 hours or high 3-4 hours.
    2. Remove Bay Leaves. Add cooked pasta, zucchini, and spinach to slow cooker. Cover and cook on high 30 minutes.
    3. Ladle soup into bowl and sprinkle with cheese.
    Enjoy! Yum!

    LOVE minestrone!! The only thing I might add is some thawed frozen Italian meatballs, quartered. YUM!!
