SIBO friendly, vegan and sugar-free hot cross buns!

  • I've been away from my beloved cooking adventures due to illness. I recently was diagnosed with SIBO so now I understand why my lifestyle and my food choices were making me sick - despite being healthy. After almost three weeks of treatment, I'm still not great, but I'm pushing through to try and get better as soon as possible. There was no way I would miss out on Easter celebrations, and I decided to make my own hot cross buns that are clean, fresh and made with the best ingredients not to trigger any SIBO symptoms. Mind you, they are delicious! Here is the recipe below!
    Ingredients
    Hot Cross Buns
    1.5 cups unsweetened almond milk
    4 tbsp vegan butter
    1tbsp activated yeast
    1 cup baker's flour
    4.5 cups spelt all-purpose flour
    1/2 cup or less of rice malt syrup
    1 tsp cinnamon
    1 tsp Christmas spice
    1 tsp gingerbread spice
    1 tsp granola spice
    zest of one orange
    a cup or less of sultanas (according to your preference)
    You may need extra flour for rolling as well as adding to the mixture if it is still sticking to the side of the bowl
    For the cross
    5 tbsp flour
    1/4 cup of water
    Glaze
    juice of two oranges
    2 tbsp rice malt syrup or any other sweetener of your choice that doesn’t disturb your gut
