- The roast chicken, a classic, humble dish for when you've got a lot of mouths to feed. I've got a great little hack for you here, for an added flavour boost to the cooking process. Just use your fingers with a spatula to carefully separate the skin down the breast meat, and squeeze in some sausage meat in a smooth layer that will cook to perfection while also insulating the breast meat. Super tasty. You've got to give it a go!

A cooked chicken is $15 in Toronto. A raw chicken is $10. This entire meal minus the fresh herbs would be about maybe $20 CAD. I love Jamie's recipes because they are accessible and delicious.
And growing the herbs from seed is cheap and easy too! I'll show you how on my channel.
Oh goodness. a good 50 plus years ago, my chef mom did this stuffing using local wild meat. Northern central Quebec. Sooo good. awesome reminder of a forgotten recipe (for me) . Lovely

How do you stop the Snails and Slugs from entering the outdoor oven or do they just add a bit of extra Essex seasoning to the dish?
Could probably just put a line of salt across the oven threshold, and then a door to block it, and maybe another line of salt on the outside too (though that one would probably blow or wash away quite quickly)? I think they go in search of food though, and given there's an entire garden of the stuff right next to the oven, maybe they just give it a miss?
