Abacus Seeds with Minced Meat - 算盘子

    Abacus seeds is one of the most iconic Hakka dishes. Often eaten during festivals, they are made by mixing mashed yam and tapioca flour which are then shaped into tiny balls resembling the beads on an abacus.
    This dish is also known for its lovely chewy texture and beautiful yam fragrance. Add more yam if you like it softer!
    We tried to follow the traditional Hakka way of preparing this, which includes stir frying them with minced meat and mushroom. Fried beancurd is also added for that extra texture!
    This is definitely a wonderful recipe for festive seasons and gatherings!

    i view quite a number of recipes on making of abacus seeds..tnis is the best, simple and clear and in detail. clearly stated the amount of ingredients used. Thank you very much👍👍👍👍👍👍👍

    My taro after adding the tapioca and water was crumbly when rolled. Had a hard time making the abacus seeds. In the end gave up and just cut them. 🤪

    My granny's signature dish! But she steams the dough instead and she also adds dried cuttlefish and lots of chinese parsley. So yummy! I think your tau gwa needs to be cut smaller.

    Thank you for this great video. The problem I had was the texture of the abacus is too springy or gluey. I was told it's not 100% tapioca flour. Any advise pls? Many thanks!

      can't add water to the dough. only yam and tapoica flour/starch.

      Probably the type of yam you used, white yam is gluey. Chinese purple yam is less gluey

      Rice flour plus tapioca flour.

    may i check whats the purpose of scoping out some of the minced meat to a different plate, and adding abacus seed into the wok with remaining minced meat?

      we were making half a server of the abacus seed for the video, if you make the full amount you won,t have to do that.

    🇺🇸🐙oh we don't get yams in my area, just potato or sweet potato...I see other people call these yams "taro" root...maybe I can find in a specialty market.?

      算盘子是广东大埔县颇负盛名的客家菜。它是用煮熟的芋头加粉搓成一粒粒和按压成算盘的样子,然后汆烫再入锅快炒。它也是很多籍贯或不同客家枝派的年菜了,寓意年年有得算。
