- I am putting these steak sauce to the test! I am cooking them all as marinate sous vide to find out which one is best! I am also doing my own take on steak sauce so you can try and let me know how you like it!

HOW TO COOK MANHATTAN STEAKS SOUS VIDE
I cooked it for 1:30hrs @ (131°F / 55°C)

2 tbsp salted butter

I was skeptical when I was always told a good steak doesn't need sauce, until I cooked a steak at home like I see all these chefs on CZcams like yourselves.... And I was so blown away by it I became a believer.
I trust Maumau's palette the most.

Can i just say like.. Guga your language is so unique. Every time i watch and listen to your videos i always notice this. Youre like 80% English 20% Spanish. Sometimes your spanish really shows but you always cap it with English i just love it. Guga has a very unique way of speaking but i always know what he's saying and that's what makes it awesome
I am surprised you used Heinz 57 Sauce(really made for eggs), and left out the Holy "Wustesher" sauce.
That is like me doing a review on Cuban pork seasoning, and leaving out Sazón.

Worcestershire sauce has a storied, rich history. Lea & Perrin is the company that invented the sauce and is still making it today. I really enjoy the acidic bite to that sauce, which is why I marinate almost every steak I buy in it (other than very expensive cuts). It deserves a video!

Great video. It’s funny but in this situation, I think avoiding the Worcestershire Sauce was a poor idea. Primarily because it is an Anchovy based sauce that brings out the Umami in meat. In my experience, marinating in Worcestershire sauce actually brings out the Beefy flavor rather than hiding it, while also enhancing the taste.
My choice of meat marinade is Worcestershire sauce, I season with a little Montreal Steak Spice blend and pepper (there is usually pepper in that blend but I find adding a little fresh ground pepper goes a long way), and I use only very small amounts of whichever steak sauce I’m in the mood for to avoid hiding the beef, and alternate between using sauce and not using it with each bite.
It’s practically a ritual for me at this point because as somebody who loves steak sauce AND steak, this is the best way to enjoy both without depriving myself of that delicious beefy flavor.
Lea & Perrin's was made for marinading. Steak sauce belongs on a plate... not in a bag. P.s Try getting your hands on a jar of Bovril as unlike it's vegetarian cousin Marmite it's made from beef extract. Great on toast (spread thinly) and also as marinade for steaks.
Lea & Perrins isn’t just Worcestershire Sauce, There’s also the Lea & Perrins Steak Sauce which isn’t as watery as A1 Steak Sauce, so it’s not running all over the plate. But even better is the flavor. It’s easily the best steak sauce. Good for a plate, and helps compliments the flavor of the steak as well.

I wonder.....when doing marinades you add the marinade, let it sit, then cook it, all in the same bag. What if you marinate the meat, then remove it, then seal and cook? Dry seasonings seem to work best because there are no liquids. So, what if you season with the marinade then remove it from the excess liquid? I wonder if that would make a difference. I don't think you've tried that yet and don't know if it's been suggested.
That's how I always do it, but ive never tried just leaving the marinade in the bag. My results have been pretty damn good tbh. Usually SPG, olive oil, and worcestershire, marinate however long I feel is right, then remove the steak and sort of lightly pat it dry before sous vide.
yeah my guess is when you cook with the liquid the flavor of the beef gets extracted but i could be wrong lol idk science

Regular Old Plumbus it’s tastes like A1 but the texture of soy sauce, and it’s also really strong.

Hey Guga great vid as always, but wasn’t this one of Chef Johns recipes from the foodwishes channel? Specifically the Manhattan filet and homemade steak sauce. I feel like it’s only right to give him credit for the idea in the video or at least the description.
I've noticed he takes a lot of things from Chef John without giving credit.

I make my own sauce this exact way as well as twice baked potato. I didn’t even come up with these methods from anyone’s recipes. If you know how to and like to cook, these things come to you because these are not particularly complicated, difficult or unique.

You just became my new chef idol. I bought a spud vide a year ago and because I’ve begun cooking most of my meals I’ve lost 60 lbs in the last year. I used to spend an hour preparing a meal, grading cheese, roasting garlic etc. I’ve been playing with my skis vide and what it can do but I feel like I’m getting lazy. Me personally, Lea and Perrins , salt 🧂 pepper garlic,vacuum sealed 24-48 hours in fridge the sous vide.
