Currently dry brining a chicken …close enough but I’ll be trying it soon on a turkey😎. I like that Achiote paste on the turkey, my mom actually marinated a turkey a couple years ago with it gives it an amazing color.
wet brines are so darn messy, dry brine is the way to go. but I know A LOT of people do wet brines for thanksgiving, so figured I'd tap into that audience. but I was pleased with the texture this time around by overcooking it a bit (as Adam's suggestion to do so)
That turkey looks great! My mom always wet brined and her turkeys turned out great (even though she used the pop up 😀). Did you track what temp this carried over to during the rest?
i didn't track it but i''d imagine it hit 180 on the thinner parts of the breast. still surprised how juicy. I never let turkey breast go past 160 but Adam seems correct with his method to fix some of the texture issues with wet brined turkey.
@@SJCOOKS Thanks. I'm wondering how far I can push it! The longer cook should help the thighs as well I would think. Trying to decide between spatchcock and breaking the bird down this year.
i wouldn't go further than that I don't think. I am going to try again today but with some chicken to see what kind of results I get with a wet brined chicken, cooked on the rotisserie.
