Mirza Ghassemi (Smoked Eggplant with Tomato, Garlic & Egg) - Cooking with Yousef

- Hi friends, today we are going to make another food from the Northern Region of Iran called "Mirza Ghassemi" (میرزاقاسمی) which is Smoked Eggplant with Tomatoes, Garlic and Eggs.
This is a simple vegetarian dish with lots of flavor and can be served as an appetizer like a dip or eaten with rice or bread as a meal anytime of the day.
Ingredients List:
- 4 Large Eggplants
- 6 Eggs (I added one later in the video)
- 4 to 6 Tomatoes
- 8 Cloves of Garlic
- 1 1/2 Tablespoon Tomato Paste
- 1 Teaspoon Salt
- 1 Teaspoon Black Pepper
- 1 Teaspoon Turmeric
- Cooking Oil (or butter)

Yes you can, but you won’t get that smoked flavor that you would with the direct flame

This looks so good. My wife makes this with canned Eggplant, I'm going to see if I can talk her into trying to roast them as you do. Mirza Ghassemi is my favorite good. It's so good.
For those of us who don't have a gas stove, can we broil the eggplants in an oven?
Hi! Yes, you certainly can, but you won’t get the same smoked flavor.
