Best pasta dish in the world period. But, as a girl from Catania (the city where this dish was invented) it is better to slice eggplants. Why do Italians always love wasting the garlic ? I don’t get it why not just chop it up and leave it in like the rest of the world

The taste of garlic can be overpowering and mask the other flavors. Americans tend to think that garlic is a staple in Italian cuisine, but it's not. Italians rarely mix garlic and onion together and they usually "scent" the oil or tomato passata with garlic and then take it out. So basically, the flavor is present, but it's not overpowering. On the contrary Americans have a lot of "garlic flavored" dishes where the garlic is the only thing you can taste(ex. garlic bread, garlic pasta, garlic flavored pizza crust, garlic sauce, etc.).
