- Classic Alfredo Sauce. The original Italian recipe from scratch.
Ingredients:
- 1 lb of pasta
- 1.5 stick of butter (185 g)
- 150 g of parmigiano-reggiano
Recipe:
1. Start by boiling your pasta and draining it. (Dont forget to save about 1 cup of pasta water!)
2. Chop your butter into smaller pieces.
3. In a large pot, mix the butter with the pasta so it melts.
4. As the butter is melting, add the parmigiano cheese in layers so it melts evenly.
5. Add the pasta water and mix it until it is “velvety and creamy”!
6. Plate it and enjoy!
Useful tip:
Use an aged parmigiano-reggiano so that there’s little to no lactose in your dish! Those who are lactose intolerant love this!

i’m lactose intolerant and it didn’t hurt my stomach. if you’re sensitive to dairy products, you should be fine!
i think it’s because parmigiano reggiano doesn’t contain any lactose! :)
Carina Köpp I’m about to cry. I LOVE CHEESE and lactose is my enemy.. this just made my year 😭
@@BrutalPoppySeed Also try sheep’s and goat’s milk cheeses, which have minimal lactose. You should have no problem with true Pecorino Romano from Italy. Remember, Locatelli Romano is pecorino. Locatelli is a brand name.
Butter and parmesan cheese have almost no lactose. Only fresh cheeses like mozzarella contain lactose.
What if you're dairy intolerant? Lol i just get so constipated
Im lactose intolerant. I made this and nothing happened. But omg thanks for this, it taste divine 😋
As far as I know, this type of cheese and butter in general have almost no lactose. The only cheese with lactose is mozzarella or other fresh cheeses.
I love her recipes, but the best part for me is when the pasta Queen gives us a little history on the recipes.
The best part of her channel, is that she gives us free original italian cuisine diy videos
as a chef I think pasta queen is full of knowledge and intelligent too.I like the way how she says, "Ingrients"
With the hair flip lol
Nadia's variations of how she says "ingredients" is one of my favorite parts. 😊
I Love it! My grandma is lactose intolerant and i made it for her and it made her day, she loved it, I love your cooking!!!!!!
When she said "simple ingredients butter and parmesan cheese" I was like ... Where did the heavy whipped cream came from them... And then bammmm.. she says "Americans came and added the cream" I love it, I love the history she gives us. Can't wait to try it even my husband said it's sounds better just the butter and cheese ❤️
You now are one of my CZcams favorites. The both of you are adorable. At first I thought Augusto was your husband.. silly me. Your brother. His expressions are priceless and his good nature is obvious. You are elegant and so is your home. I've cooked for many years but still can learn and improve. Your recipes are simply delicious and your videos are most enjoyable. Tante Gracias
I made this recipe and my son who doesn't like American style alfredo sauce, loved it. Delicious and so simple.

Most people, around 65% of humans are lactose intolerant to a certain extent. so this recipe would be great for people who get the tummy ache after an alfredo with cream!

Hi! I’m so excited!
I LOVE PASTA QUEEN ❤❤❤❤❤
I’m lactose intolerant and I always wondered why cheese doesn’t effect my stomach and now I know !! Thanks
And yes steam does look philosophical 🧐 because of the way it slowly moves and dissolve into nothing with zero resistance completely accepting its fate 😢😢😢
I was never a big fan of what americans know as alfredo but i made this one night and its been a favorite ever since. Love you pasta queen.
I'm using your recipe right now,and it is so creamy and delicious
Thank you for sharing this recipe looks more light than the recipes with heavy cream.
I will make this it looks amazing! You both are hilarious 😂 thank you for that tip buying cheeses 🧀 I use to always take out all the pasta water now I will use it in my pasta 🍝
I just woke up and I want to eat this for my lunch.
Original only allowd. Just Gorgeous!
Looks devine!

I loved learning this about Lactose intolerance, my mom has it And now I know I can make her Alfredo sauce.
I want her entire outfit. I LOVE her style!
great recipe and demonstration and you are beyond beautiful!
It's a creamy sauce -
Americans: add cream, got it!!!
Italians: NO!
Bellisima!!! Love your videos!! Gorgeous! ❤😊

I can’t wait to make this for me and my boyfriend. I am always fascinated when it is the easiest and simplest things that turn out to be the timeless classics. 😍🇮🇹
WOW this one she tells us how to cook. how much to use.thank you..
I'm not Italian at all and I cooked Alfredo pasta exactly the same way except for I added some chopped parsley. Oh it's so tasty and creamy either with that parsley taste to it. Just couldn't get my fill. I thank you for the recipe and interesting video. 👍
Love it 🥰 love it 🥰 love it 🥰
Came for the recipe, stayed for the chemistry lesson ⚗️👌🏻
chef kiss.
Love the recipe, you are very very funny!
I love the history. I want to go to Italy so bad now 🇮🇹
❤️
Just made this right after watching your video, it’s pretty good! I’d maybe go with a little less of the butter, and add salt. ✌︎
Janice H yes, salt to taste 😎
Two sticks of butter is absurd. At Il Vero Alfredo, where Fettuccine Alfredo was created, the equivalent of a half stick of unsalted butter is used. At most, use only one stick of unsalted butter.
Siete molto bravi ragazzi!
Super easy
this is genius for the lactose
Aaa I really want that pasta blouse
Omg me too!!!! I love blouses but that one looks amazing on her❤️❤️❤️👍🏽
Whoa you own such gorgeous black cat!! What a cutie pie!!
Thank you for the origin story and great recipe!
Not the original story, this pasta was created in Naples NOT Rome and certainly not by Alfredo, he just served it in his restaurant it ended up overseas and he got credit for it.
I have done this for years without even knowing this is the true Alfredo!
That's pure KISS - keep it simple & sexy... will cook that for the family tomorrow. Thanks a lot for your insights and marvellous recipes!
We love you Pasta Queen. Where can we buy those red, black & white plates?
Love your recipes and info!! Where did you get your earrings?!
Have tried American version of Alfredo but it's too heavy and it's hard for me to digest is a lot of heavy cream and then cream cheese and then more cheeses but I like how simple and straight to the point and lightweight is authentic Italian recipes are
I will never buy Alfredo sauce again! This recipe is looks wonderful. I'll be trying it this week. Love from Vermont
No Italian would ever buy a so-called “Alfredo sauce” ! What you see in this video is what we in Italy mean by “Alfredo Pasta”, which would be, and in general in Italy it is also called…..“Pasta, Burro e Parmigiano” (pasta, butter and Parmigiano). Typical pasta for this dish are “Fettuccine”.
Watching you make pasta recipes confirms how extra we Americans are. We’ve added so many more ingredients and unnecessarily increased the calories on all pasta recipes.
Is the stove on when you add the butter and parmesan?
Love ur stuff u rock! Xoxx
weldone thank u for shareing
Hi guys, I have a question for you, is the butter that you use in the recipes with salt or unsalted butter? By the way, excellent recipes you and your brother do very good things, and your brother is beautiful!!
A late reply, but I think it is best to err on the side of caution, and use unsalted butter instead. Parmigiano cheese and the pasta water will add a significant amount of saltiness already. At least, when using unsalted butter, you can add more salt to taste.
P. S. Hope the pasta queen approves of this tip.
Yum
Washing the pasta!!!!! ARE YOU NUTS!!! LMAO!
Thank you for this delicious recipe! This is my favorite pasta sauce.
How many people does your recipe serve? Two? Please let me know.
A pound of pasta should serve 4 people comfortably.
Thank you

I found this channel on the "Creators on the Rise" list of "Browse Channels". I like eating pasta so I found the channel interesting from the name of it, and this is the first video I watched from this channel. :)
AwesomeM856 yay! Welcome 🤩
@@thepastaqueen Thanks, I subscribed just today. 😊
dear pasta queen, would this be classic alfredo sauce if i used pecorino romano instead of parmigiano reggiano, or would it be something else entirely? i have a cow's milk allergy, so lactose or no lactose, the parmigiano reggiano would trouble my digestion.
The Bro 😊⭐😊
Oh my god you are really the Ilatian foods Queen👑
Can you please tell me how I can order your pots
I still like it with cream, garlic and nutmeg better. Ive tried to make it this way and it keeps getting a bit clumpy. But Ill keep trying.
How do you prevent the parmigiano from beading up in the heat? How long do you cook the pasta to get the perfect al dente? Do you keep it on high heat or reduce to medium after adding it to the water?
there is no precise time to cook pasta al dente. each pasta cooks differently. you taste it and when it is soft enough, but it has kept the "thread" inside, drain it. Otherwise, read the cooking minutes and drain it one minute before, even if you always have to taste. then when you put the butter and the pasta on the fire together, turn the fire down.
Timothy Van Atter pasta water + sauce and pasta on with a light flame can make almost anything silky-smoothe
