Original Alfredo Pasta Recipe (Without Cream or Chicken) - The Pasta Queen

  • Classic Alfredo Sauce. The original Italian recipe from scratch.
    Ingredients:
    - 1 lb of pasta
    - 1.5 stick of butter (185 g)
    - 150 g of parmigiano-reggiano
    Recipe:
    1. Start by boiling your pasta and draining it. (Dont forget to save about 1 cup of pasta water!)
    2. Chop your butter into smaller pieces.
    3. In a large pot, mix the butter with the pasta so it melts.
    4. As the butter is melting, add the parmigiano cheese in layers so it melts evenly.
    5. Add the pasta water and mix it until it is “velvety and creamy”!
    6. Plate it and enjoy!
    Useful tip:
    Use an aged parmigiano-reggiano so that there’s little to no lactose in your dish! Those who are lactose intolerant love this!

    i’m lactose intolerant and it didn’t hurt my stomach. if you’re sensitive to dairy products, you should be fine!

      @@BrutalPoppySeed Also try sheep’s and goat’s milk cheeses, which have minimal lactose. You should have no problem with true Pecorino Romano from Italy. Remember, Locatelli Romano is pecorino. Locatelli is a brand name.

      Butter and parmesan cheese have almost no lactose. Only fresh cheeses like mozzarella contain lactose.

      As far as I know, this type of cheese and butter in general have almost no lactose. The only cheese with lactose is mozzarella or other fresh cheeses.

    Most people, around 65% of humans are lactose intolerant to a certain extent. so this recipe would be great for people who get the tummy ache after an alfredo with cream!

    I'm not Italian at all and I cooked Alfredo pasta exactly the same way except for I added some chopped parsley. Oh it's so tasty and creamy either with that parsley taste to it. Just couldn't get my fill. I thank you for the recipe and interesting video. 👍

      Two sticks of butter is absurd. At Il Vero Alfredo, where Fettuccine Alfredo was created, the equivalent of a half stick of unsalted butter is used. At most, use only one stick of unsalted butter.

      Not the original story, this pasta was created in Naples NOT Rome and certainly not by Alfredo, he just served it in his restaurant it ended up overseas and he got credit for it.

    Have tried American version of Alfredo but it's too heavy and it's hard for me to digest is a lot of heavy cream and then cream cheese and then more cheeses but I like how simple and straight to the point and lightweight is authentic Italian recipes are

      No Italian would ever buy a so-called “Alfredo sauce” ! What you see in this video is what we in Italy mean by “Alfredo Pasta”, which would be, and in general in Italy it is also called…..“Pasta, Burro e Parmigiano” (pasta, butter and Parmigiano). Typical pasta for this dish are “Fettuccine”.

    Hi guys, I have a question for you, is the butter that you use in the recipes with salt or unsalted butter? By the way, excellent recipes you and your brother do very good things, and your brother is beautiful!!

      A late reply, but I think it is best to err on the side of caution, and use unsalted butter instead. Parmigiano cheese and the pasta water will add a significant amount of saltiness already. At least, when using unsalted butter, you can add more salt to taste.

    dear pasta queen, would this be classic alfredo sauce if i used pecorino romano instead of parmigiano reggiano, or would it be something else entirely? i have a cow's milk allergy, so lactose or no lactose, the parmigiano reggiano would trouble my digestion.

    I still like it with cream, garlic and nutmeg better. Ive tried to make it this way and it keeps getting a bit clumpy. But Ill keep trying.

    How do you prevent the parmigiano from beading up in the heat? How long do you cook the pasta to get the perfect al dente? Do you keep it on high heat or reduce to medium after adding it to the water?

      there is no precise time to cook pasta al dente. each pasta cooks differently. you taste it and when it is soft enough, but it has kept the "thread" inside, drain it. Otherwise, read the cooking minutes and drain it one minute before, even if you always have to taste. then when you put the butter and the pasta on the fire together, turn the fire down.
