when I first know about the concept of chazuke, literally tea soup on rice, I was shocked. how can you eat rice with tea? but well, even when I eat rice watered with plain tea, it is still palatable.

The first time I tried to make ochazuke I added too much hondashi stock but was nervous to try again because all I could taste was overwhelming fishiness! Your method (and adding less stock as well as a dash of sugar!) made it so much more palatable. I didn't eat much of it but I hope that once I start eating normally again I'll eat this more often! And maybe with some fish! Thanks again!

Honestly I find the anime having panning shots a bit less boring.
It’s because season 4 and 5 wasn’t following the manga so that’s why it wasn’t good. People weren’t happy about the ending of the manga so the anime tried to do something else

I recommend taking those pin bones and then putting them in an oven to make them crispy. Put this on top as a garnish and it brings out lots of flavor, might not work for this dish, but it's really good when you eat standard ochazuke

I form the onigiri in a bowl first and then shape it by hand - found this helps contain the filling better

Oh damn.... 2 weeks ago I made a wild salmon poêle style with a sour apple compot and some self-made tagliatelle, topped with purple potato chips (also self-made) and a light pepper sauce. It was SO delicious!

@CHEFPK here is the tip on making rice
In the first time washing it, try rub it with your hands as much as possible
Then drain the rice water
Then add new water
Keep draining and adding until you see the water in the pan is quite clean (still have a bit of the white in there)
Then cook it
Trust me, way better
I typically agitate it a bit but I usually don't drain all of the liquid out because... I'm lazy =p

Oooh, fishes where I live cannot be deboned like the English fishes. And so, when I was kid, eating the in bone fish was really a pain. But I learnt how to go about picking the bones while eating as I grew older.
Chef do u know about kasbai rice it has a nice aroma I think u should make something by using this rice
You need to add dashi, more tea for an earthier taste, and a bit more than a pinch of salt. If you really want a game changer, rock salt on top of the fish to finish it off.
