Sausage Scramble Breakfast With Avocado and Sourdough toast
Lions Mane Mushroom Brain Boosting Sausage Patties
Ingredients:
2 Lions Mane Mushroom, each about the size of a baseball
2 cloves garlic, ground
1 teaspoon ground Fennel Seeds
1 teaspoon ground Black Peppercorns
1 teaspoon Smoked Paprika
1/2 teaspoon Garlic Granulated
1/2 teaspoon Chili Flakes
Olive oil blend
1 tablespoon fresh Thyme, chopped
1 tablespoon fresh Sage, chopped
1 tablespoon fresh Oregano, chopped
Instructions:
Using the #SarnoSear press method, place a cast iron skillet over medium heat and add a little oil to the pan. Heat until hot.
Add the Lions Mane Mushroom to the skillet and press them gently with an additional pan, applying light pressure to help extract excess liquid from the mushrooms while evenly searing them.
Flip the patties and continue to press until they reach the desired thickness. This may take a couple times.
Evenly sprinkle the ground garlic, ground fennel seeds, ground black peppercorns, smoked paprika, garlic granulated, and chili flakes over each side of the mushroom patties.
Cook the seasoned mushroom patties for a couple of minutes on each side until they are fully cooked and have a deliciously browned exterior.
Remove patties from pan, add to mixing bowl and add fresh herbs and Olive Oil to marinade for a few minutes and up too over night.
When ready add to a hot skillet or oven to be reheated and served.
They make a delightful and savory plant-based option for a satisfying breakfast or a flavorful addition to any meal.
Note: You can serve these patties in a sandwich, alongside some roasted vegetables, or even with this scramble for a variety of delicious serving ideas.
Whole Block Tofu Scramble with Cherry Tomatoes
Ingredients:
1 300g block of organic tofu
6 cherry tomatoes
1/2 teaspoon turmeric
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1/2 teaspoon black salt
1 tablespoon plant-based butter
Instructions:
Drain the tofu and pat it dry with paper towels.
Heat the Skillet:
Place a cast-iron skillet over medium-high heat and allow it to get hot.
Melt the Butter: Add the plant-based butter to the hot skillet and let it melt.
Place the whole block of tofu in the skillet, allowing it to cook undisturbed until it forms a crispy skin on one side. This may take a few minutes. Add seasonings to top of tofu.
Add Cherry Tomatoes to pan.
Once one side of the tofu has developed a crispy texture.
Sprinkle the turmeric, granulated garlic, ground black pepper, and black salt over the tofu block.
Gently scramble the tofu block to incorporate the seasonings evenly.
Allow the mixture to cook for an additional 3 to 5 minutes, ensuring the flavors meld together, and the tomatoes soften slightly.
Serve and Enjoy:

For 18-months my wife and I have been learning & working the “whole food plant-based eating style. Early on I learned is that I wanted to keep foods I liked just to make them healthier. Thanks, Sir, for this recipe. While I haven’t embraced the “sausage” yet, the scrambled eggs are a huge plus. We now have scrambled egg sandwiches again & they’re delicious. 👍

Wish I had access to those mushrooms, my tesco manager refuses to stock them. 😢 I found an old recipe from the Great Depression to make American breakfast sausage patties using cold cooked oatmeal. I have altered it to make it vegan by using flax eggs instead but it turned out the closest I have come, so far, with a homemade breakfast sausage. But I one day hope to get ahold of some lions mane mushrooms to be able to make your sausage patties. We have never had a recipe from Wicked Kitchen that we do not enjoy! Even watching your videos gets the entire house drooling and then coming up with other ideas they wish you would make lol.

@@DerekSarnoChef We have a local grower producing gorgeous lion's mane, chestnut, oyster varieties and maitake. With the great quality and easy access I haven't cleared the mental hurdle of growing my own.
With the wet summer we've had in NJ we also have a bounty of chanterelle right now.

Oh this is going to be a new breakfast staple in my home! Any suggestions for glass top cooking, especially when it comes to cooking mushrooms? I miss using my cast irons on a gas range.
I used to have a glass top, just use it the same, monitor the heat a bit more is all.

The video showed you using 2 cloves (the spice) in the mortar, but the recipe in the description lists cloves of garlic. Also it says garlic in the procedure where it would be the place for the ground cloves. I assume the spice is what's intended.

they are pretty hard to find anywhere, and likely cost an arm and a leg! We may have to substitute. from UK.
You can get a grow kit from North Spore Mushrooms online, they ship if you cannot find something closer.
They do not cost allot for what they produce and in the UK Marvellous Mushrooms is one good source.
