Beautiful video. I am so glad I came across it. I remember as a kid eating California amaranth with pork.
This reminds me of when I was younger and visiting my mexican friend's house and seeing his mom in the kitchen with plastic bags full of those that she just came back from foraging. I found it interesting how I never noticed the plant beforehand but afterwards I saw it everywhere. A local food that most of the population completely overlooked. Ever since then when I see them on the side of the road or growing out of the sidewalk I think of them.
I cook for a vegan and Native foods of the Americas are perfect for this diet…. Tacos de quelites, sauteed nopales…. etc
