To elevate the taste of leeks and onions you can also add a tiny bit of butter alongside the olive oil (thanks Akis).

Leeks are notorious for hiding lots of dirt between the leaves, so it's a good idea to wash them carefully after you cut them to avoid grit in your pitta. :)

A great recipe that I would try! But I don't agree that shortcut pastry is unhealthy when it is part of a dish like this one. Healthy is all about balance, moderation and the quality of the ingredients :)
