My secret is balsamic vinegar. I'm not sure if it's keto, but I can not make pasta sauce without it. It adds such a rich, deep twang that bounces well off of the sweet sautéed or fire roasted onions and bell peppers, depending on what I have on hand and how ambitious I'm feeling that day.
Lots of sugar in it but if you don’t use much it might be okay. For savory recipes using brown sugar I use a little blackstrap molasses instead: very sugary but not much is needed.

No it is not keto but I use a splash of it anyway as I'm not getting sugar from other sources. I stay below 30 carbs.

Looks yummy! Anise is my secret ingredient, too! My mother always added it to red sauce and so I do, too! I honestly love red sauce, period, but a pinch of anise seed just elevates it to something special. And, for those who add sugar/sugar substitute to sauce, this does the trick for that so you don't need "sugar" to balance out the flavor.
Thanks for the reminder about Baked Ziti, Annie! I'm going to give your recipe a try - I usually use double cream ricotta, but I have cottage cheese in the fridge and no ricotta right now. Mmm... Dinner was supposed to be Chiles Rellenos Cssserole (it's Tuesday, after all and close enough to tacos), but that may change! Heading to the freezer to grab Italian sausage to thaw!

My 90yo mother is a tough cookie in trying DIFFERENT/"new" things, but the Good Culture cottage CHEESE quickly became her FAVORITE!! If curbside says it is "out of stock" then she says SKIP, until it is restocked!
We have that pasta in the cabinet and never used it. Looks like now's the time! And I'll definitely try that anise add. That should work really well with the sausage; if it's Italian sausage, it probably has fennel seed in it. I'll sub out the cottage cheese for ricotta, though. Cottage cheese in an Italian recipe just seems wrong.

Maybe it's just me, but I will never visit a channel who "advertises" itself on someone else's channel. Just tacky.
Please put a bowl under the colander when draining the pasta, the thought of the bottom of the sink holding water and that water coming back up to the colander and touching the pasta makes my stomach turn.

I use this brand for my substitute rice and it works excellent, not the same success with pasta but I’ve always thought that banking it probably delivers better texture. ❤️

I like this kind of video. I wonder has anyone done a test with keto/gluten free pasta in a frozen kind of casserole and see if the noodles hold up after baking it post-freezer. I also find lots of gluten free keto pasts to either be gummy or heavier than white pasta especially when it's made from legumes. The only one I've liked has been Capello's which is good but if you overcook it's slimy and you sometimes can have some tummy upset because of too much tapioca fiber in one sitting.

Subtract the fiber to get the net carbs.

Interesting recipe. I went to shop the noodles and discovered that they average $10-$12/8oz pkg. At about 15X the price of WW pasta ..... not as interesting anymore.
The recipe is still the same - just sub for whatever pasta you like. 🤷🏼♀️
I bought mine from thrive when they were $5ish/box. I would never pay $10-$12 either

Serving size for the pasta is only 1/4c 😯 I could never eat that little pasta even if it doubles during cooking! Best I avoid this as pasta is a trigger food for me😢

A big thumbs down! Thos noodles cost TEN BUCKS for an 8oz box!!
Depends on where you get it. If you are counting carbs, it's important not to use regular pasta. If you don't care, use whatever you like. But this recipe is for those of us on keto. If you are on keto, you already know low carb costs more because it cost much more to make the food. Thrive market has it cheaper, and ordering from the company is cheaper still when you get a code. But again, this is for people trying to eat clean and healthy without all the carbs. I just don't get why others have to bash that choice.
Sell out
