    (2 Servings)
    35g (1 serving): 3.97g net carbs
    Fresh baby corn, raw (6g net)
    Egg white powder (0.44g)
    xanthan gum (0g net)
    Baking powder* (optional, 1g net)
    Sea salt (optional)
    *Different brands of baking powder yields different results as It will contain different ingredients. All baking powder has carbs. Purest brand has the cleanest Ingredients. Baking soda and cream of tartar will also work, with less carbs. Cream of tartar has carbs.
    If using canned baby corn, omit the sea salt. Canned baby corn comes in a salted brine. Rinse before using.

    I oven baked mine because I don’t have a food dehydrator. They turned out nice and crispy. The ones in the middle were a little thicker so I deep fried them quickly after and they crisped up nicely.
    They have a definite corn taste and are great with salsa. I will be Investing in a food dehydrator for future snack ideas.

    I told Serious Keto he should try baby corn. Surprised he didn’t do this first. I don’t know enough about food to make it myself, but surprised someone didn’t do this sooner. Yahoo!! Definitely going to try this. I wonder if a tortilla press would make this thinner with parchment paper.

      I’ve been using baby corn for keto cooking for awhile. I’m very surprised that not many people know about baby corn. This recipe is based of a corn chip I’ve been working on the last year or so. I just picked it up from where I left off and still need to spend so much time on it lol I reduced the ingredients list and made it more simple to make.

      Steve from Serious Keto did a baby corn recipe way back in 2019 (or earlier) . He did a corn tortilla wrap but not chips.
      His do not become chips.

      @@sgreen4865 I grew up eating baby corn. My grandma used to make delicious food with it. Love the texture (gotta be fresh though).
      I’m surprised Steve’s video didn’t go viral or helped spread the word about baby corn. He has such a big following. I’ve never seen anyone use baby corn in their recipe except for keto connect (their corn bread recipe).

    You could toss in a ranch, sriracha with cheese or white cheddar popcorn flavor ing after frying.... or spray with your keto cooking oil. Then sprinkle with seasoning. Add to airfryer to set and crisp.

    This makes me wonder if someone could make a low carb crema de mazorca soup (corn soup) or traditional corn chowder but low carb??? 😊 Also, I wonder if you sub ground chia seed for the flax would it work the same way and produce the black flecks you see in regular tortilla chips... This is worth an experiment!

      🤣 Don’t you worry! If I’m ever inspired by someone, I will always credit. Not crediting the creator is my pet peeve because people do it to me. If Steve did come up with a keto corn chip recipe, good for him! Let me know if my recipe is anything like his (all ingredients and method), which I highly doubt, because I have never seen his video before. Fun fact: using baby corn as an ingredient is not new to me since I’m Asian. My family and I use it to cook, and I’ve eaten many vegetarian dishes with it growing up. I love that you are trying to call me out on it and looking out for others, but unfortunately, it’s not the case here. You are my kinda people! Much love! ❤️

    As you’re frying them at the end to make them golden brown, is it not possible to dehydrate them at a higher temperature in the oven? Additionally, I wonder if the batter could be made thinner with water to allow it to pour and flow into edged silicone dehydrator trays, then cooked in the oven at a higher temperature to dry it out again? I’m going to have to do some experiments!

My mom is my inspiration because she is a great cook and used to experiment a lot in the kitchen too when I was young. I do a lot of research and do a lot of experimenting.       I would tend to believe that even at a low setting, using the over for so many hours might not be good on the electric or gas bill. Maybe? A dehydrator would hopefully be more conservative on power ;-D

      @@RecipesForLittlies No, I don't have a dehydrator but I have a little Ninja Foodi Oven and it can be set to do dehydrating, as low as 100 degrees! I haven't tried it yet, but these would be a good thing to try it with! I have some health issues that prevent me for a while to do much in the kitchen, but I have made a note of these and hope to try it, eventually. Thank you for you nice response ;-D

      Dehydrators have time settings so they shut off automatically. No worries about forgetting to shut them down.

    Is being in the bacteria range for so long before they are dehydrated a problem?

      Thats the temperature to dehydrate vegetables around 115-125F. It’s not meat. I don’t think excalibur will design a dehydrator with low settings if it was going to be harmful. Lowest is 105 for herbs.

      It works really well. I blend them up and add it to the liquid of my corn bread then add to dry ingredients.
      My standard recipe to replace one cup of all purpose flour is 2/3 nut flour, 1/3 egg white powder and 1tsp xanthan gum. If the recipe calls for more than two cups of flour, I divide egg white powder and whey protein isolate so it isn’t too eggy at the end. I add the egg white powder for less dense texture and less calories. I’ve been trying this to translate nonketo recipes to gluten free/ keto recipes for a number of baked goods and so far it works great, however you typically need far less liquid (maybe 1/2) than is called for, I just add it slowly until it looks right.

      Baby corn? I tried it by itself and the smell wasn’t pleasant for some reason 😂 It lost a lot of water content and hardly anything left. I would make this recipe and then grind it up!

      Do you have a Costco near you? That’s where I got mine. You’ll need the same amount since it weighs the same fresh or canned.

    Hey, what are the guidelines for dehydration in the oven again....?

      Lowest setting in the oven with the door slightly open. Lowest is 170F, so it’s a bit higher then the dehydrator method. Guideline for time is 6-8 hours, but it depends on how thin you spread it.
