How to Cook Dried Chickpeas - Easy Hummus Recipe

  • Today, we're gonna show you how to prepare dried chickpeas in a simple easy step by step tutorial. While there are various methods out there on this subject, this is certainly our preferred way to always get the best evenly cooked soft chickpeas.
    Chickpeas are a healthy and versatile ingredient very common in the Levant. There are these small breakfast shops that only sell chickpea and bean dishes. They normally have a very big pot of chickpeas that’s simmering gently from which they prepare a variety of delicious breakfast dishes. And we’ll try to cover some of these recipes in future videos!

    I didn't realise chickpeas could be frozen! Living alone I tend to use tinned but this is great. Well worth the effort to batch cook and freeze. I'm loving your videos.

    Cheers for this educational video, I'm just discovered how much protein chickpeas have along with lentils, they are also cheap to buy in dry form, so I'll be cooking these in many meals. Money is tight now so this video was very helpful. Cheers mate.. I will no longer stare at dry chickpeas and lentils in a bag on a supermarket shelf and wonder what are they all about.. Once again cheers.... Humus is Arabic for chickpeas, I didn't know that as well.

    I agree. I have one more year before I become a certified chef & although, I only learned of the power of chickpeas in college 10 years ago. I believe this method produces the softest I have seen thus far!

    Thank you for this easy to follow step by step tutorial. I use it every time I’m making chickpeas and they come out perfect. Also great tip about freezing, I thought they would go mushy in the freezer but actually they retain their shape and flavour just fine. Thanks so much!

    Great video. It gave me exactly the information I wanted. I had known about cooking chickpeas with baking soda before but have never done this as I was uncertain how much baking soda to add or how long to leave the peas in it before cooking them. Now I will definitely batch-cook chickpeas and freeze them. I have found brown and green chickpeas in my wonderful Asian food shop and have also recently discovered black tahini. Now to make some hummus b-tahini

    Incredible! The very best method I have found on chickpea preparation! Made the softest, most delicious chickpeas without the long task of removing the skins by hand.. Cooked these in a pressure cooker and there were hardly any skins left. The ones that remained were completely soft and smoothly blended in with the rest of the chickpeas when making hummus. And so incredibly easy! I doubled the recipe without any problem. Thank you so much for this.... extremely grateful!!

    Middle Eats just released their hummus dip recipe and one thing that stood out to me was their instruction to cook the chickpeas until mush. Curious to see what you advise when you come out with your hummus dip recipe.

      If Syria Palestina was defeated long ago (as you wrote), there is no "Palestine", so what is there to free, as you wrote in an earlier comment ?     Great vid. Thanks. I’m trying to my first home made batch right now. The only thing, when do you remove the outter skin? After the final boil? My peas had skin on them. Not sure if yours did. What’s the best way to remove them once boiled? Thanks again

    I followed this guide while preparing my first hummus ("bi tahini" apparently.) I hope you can add a recipe for that in the future along with ratios (so it's easier to calculate for different serving sizes.)
    By the way, are there any uses for the soaking water after? I used tap water for the first 3 hour soak and I used distilled water for the overnight soak so I don't want to use too much drinking water only to throw it out later. Tap water has a bad reputation in my country.

    To decrease bloating can I put ginger powder instead wash with baking soda? Does ginger powder decrease bloating too?

      His technique is terrible so dont bother. Just wash them dry than leave them in warm water with salt and a bit of baking soda(optionally) overnight. Make sure they stayd up to 12h.
      You can wash after a bit than boil again till butter soft / just like regular beans

    For using frozen chickpea should we dip them in water again for melting ice or use it directly as taken from freezer?

      Usually we just take them out of the freezer the night before to defrost :) if you wanna use the whole, you can boil them a bit to warm them up. If you wanna use them mashed, it's best to cook them very well (beyond aldente), then mash them and freeze them mashed. Then, you would not add water to defrost them ...

    Should I peel the skins off of them after they are cooked? I plan to use mine for hummus. First batch I made a few days according to the package directions did not come out well. They were hard and dry and went I went to mash them in my mortar and pestle the skins were pretty distinct.

      If you are boiling chickpeas to make a hummus dip, always make sure to boil it a bit extra till the chickpeas become very soft and much easier to mash. If you are using a food processor, you prob don't need to remove the skin but if you are using a mortar and pestle, removing the skin will give you a smoother and silkier texture. Another tip would be to prepare your hummus dip (whether by a food processor or a mortar and pestle) while the chickpeas are still hot as it helps getting a better texture!
      Try our method for preparing dried chickpeas and let us know how it turns out! That's the method most places in the Levant use. If you also have any more questions, please don't hesitate to ask! ☺️🤗

    Anyone know how many dried chickpeas in cups for 500 grams?

      Due to chickpeas irregular shape the weight of a cup will vary from cup to cup but using a displacement measurement a cup is 200 grams. The best thing to do is get a $10 kitchen scale from Amazon but if you don't want to do that just do about 2 and a half to 2 and 3 quarters cups, that will be pretty close

      Fyi 500 grams is a little over a pound (1.1 pounds) and in the US, the store sells chickpeas aka garbanzo beans by the pound already in proportioned bags so if a recipe calls for 500 grams, just use the whole bag. This isn’t baking so you’re measurements don’t have to be exact Anyways I’m gonna assume a lot of stores around the world sell bags of chickpeas in 500 gram bags so it’s a 1 bag Beans to 1 TB Salt to 1 TB Baking soda. Now you don’t even need to measure or weight the chickpeas. …If you use a 1/2 bag of beans then it’s 1/2 TB Baking soda and 1/2 TB salt. If your making a big batch and use 2 bags then it’s 2 TB baking Soda and 2TB of Salt.

      Chickpeas may have an unpleasant smell when boiling them. This is why we suggest adding a bay leaf or a stick of cinnamon while boiling, just to give them a pleasant aroma.

    Am surprised you use baking soda but then don't remove the skins. Won't the skins be half off making for a strange texture? Especially annoying with humus dip that has skins.

      Easy and time-consuming are different concepts. This is VERY easy. I cook dried beans and it's about the same procedure.
