  • In July 2016 we had a small family catch-up at which time we had a hangi. A hangi is the traditional Maori earth oven feast that is often had at special occasions, celebrations and large gatherings. This is only a very small hangi but the principles are the same no matter the size. Basically rocks are heated in a fire for several hours while the food is prepared and placed in a suitable basket. The hot rocks are then placed in a hole and the basket placed on top. Wet sacks, sheets or similar are placed over the basket and then dirt is piled on to trap in the steam and heat. After the food is cooked (which varies depending on how much food) you reverse the last few steps and you are good to go. There are different methods for preparing a hangi depending on where you live and who has taught you but the basic method is the same. Hangi food is delicious, it is a combination of roasting and steaming so is very moist. There is an unusual taste through the food from being cooked underground but it is by no means unpleasant. In fact, once you have tried hangi a couple of times there is no better meal. Hangi pork and mutton is some of the best eating you will ever do (and Kumera (sweet potato)). If you are ever visiting New Zealand make a point of trying a hangi meal. Even better would be to find someone that will let you be involved in the process!

    I’ve had 2 hangi’s in my life and it is so rewarding. After a lot of time cooking it it definitely pays off and you can taste the pure smokiness, it’s just so different (in a good way) to a normal roast.

    Love my Taranaki whanau both Pakeha and Maori. We are all one in the Naki. Its cool as the wairua in Taranaki. Beautiful laid back people just like that Tupuna Maunga there. Love the black rich fertile soil in the Naki. Awesome video re the hangi. Well done guys and gals. Ataahua / beautiful. My mums from Manaia - Manuirirangi whanui. Her marae are Waiokura in Manaia and Oeo in Oeo. I was born in the beautiful fresh clean winter air of the Naki in Hawera July 1961 in the shadows of our Tupuna Maunga. Tangi up every time I see our Tupuna Maunga. Cool vid and awesome looking whanau in it. Thanks for sharing. Kia ora ra.

    Hey.The clip of a ordinary European farming family of Taranaki shows you that they live and enjoy different preparations, types and styles of family celebrations. What they have prepared and cooked can feed up to 50 plus people. and done by men giving the ladies time off, a rest period as the the wivies cook all year round for their families and hubby. That's how i was taught. The done better than the plastic Maori's in Australia even back home. Remote areas, that's where the culture is for all people., and not at K Fry or Ronald Mc Donald's Trotters hehe!!

    A beautiful thing.... if you guys get some kind of greens, like cabbage, lay over the heated stones not only to keep meat from being charred or burnt but also to add more steam. All in all, food looked delicious

    Yep. Heapsa time and patience goes into preparing a Maori hangi. Spent time in Fiji years back with the opportunity to help the Fiji whanau prepare a lovo. Same method as a hangi except it's cooked above the ground. It was tumeke. Bula vanaka

      Thanks man. We were having this hangi for a friend when he was over from Kenya but he wasn’t able to make it due to something else. I did the video for him so he could get a feel for it. There have been heaps of kiwis comment from overseas so it really must remind them of home. Glad people are enjoying it 👍

      Hi Connie, we heated the rocks for around 3 to 4 hours and then cooking time was about 3.5 hours. We use mutton cloth to hold the food and then old sheets and sacks over the basket before putting the dirt back on. You do need to add some water to get the steam going before you cover it over. You will also need someone watching as the steam builds up pressure and you need to add dirt to trap that in.

    the Inca Tupac Yupanqui apparently visited Polynesia or specifically New Zealand In Peru the kitchen with red-hot stones is 5000 years old and is called pachamanca, identical to what is seen in this video would the Incas have brought this to Polynesia?

    Not bad at all. Good size hession too. Just a couple things different l saw was, no Shroud/Sheet. When you finished pulling away the sacks, you could either remove the shroud/sheet then lift or just lift basket out shroud/sheet and all. But it looked nice.
