🍞抹茶扭花面包Matcha Dinner Rolls 8个/ Pieces
高筋面粉Bread flour 415g
即溶酵母Instant Yeast 5g
奶粉 Milk Powder 15g
细砂糖Sugar 65g
盐巴Salt 4g
全蛋液Whole egg 50g(带壳约56g/ with shell about 56g)
牛奶Milk 55g
清水Water 165g
无盐黄油Unsalted Butter 45g (软化/Soften)
🍞抹茶奶酥馅Matcha streusel:
无盐黄油Unsalted Butter 105g (软化至大约23C/Soften to about 23C)
细砂糖Caster Sugar 40g
全蛋液Whole Egg 30g (室温/Room temperature)
低筋面粉Cake Flour 50g
奶粉Milk Power 70g
抹茶粉Matcha powder 5g
🍞提前30分钟预热烤箱至375F° / 190C°, 在烤箱中层烤12-14分钟
Before 30 minutes Preheat oven to 375F°/ 190C° , Bake in the middle of the oven for 12-14 minutes

牛奶的用量请根据冬夏和面粉吸水性适当调整
鸡蛋的大小也会影响面团的湿度
夏天液体都用冰的,冬天可以提约20分钟拿出来回温,备用。

You baked the bread for 12-14 minutes at what temperature?the temperature you just posted is pre heat temperature of oven not baking temperature

The bread looks so delicious & I'm a fan of matcha. Does cold water means room temp water OR ice water? I thought yeast needs warm water/milk to ferment?
Cold water is around 3-15 degrees. The the finished mixed dough should be around 24-27 degrees, so you use the cold water to control the temperature because when you knead the dough, the temperature will rise. Warm water is usually used for active dry yeast.

For the milk powder in the dough, you can just skip it.
For the milk powder in the filling, you can use almond flour instead.

It should work, the matcha just for flavour and color, so you can change it to something else easily.

yes you can. keep dough at lower temperature around 22C, use a scraper to help clean the board if the dough is stick.

烤箱预热是很重要的,具体预热时间可以根据你使用你的烤箱的经验调整。如果预热不充分,很多时候就需要烘烤更长时间才能烤熟,同时烤出的面包上色不漂亮,面包也容易发干。

Try using almond flour to replace milk powder. You can reduce the amount of flour, use more almond flour instead, and adjust softness with egg liquid
