Hey. Yes you can choke the open hats to closed. You can check my crush crush crush cover, it has a part that the hats goes on and off. For the triggers, it's kinda sensitive but you can get used to it. You can use pedal triggers of other electronic drum kits such as the yamaha DD series.
tingkia I got my kit today and the pedals are pretty solid from what I can see but they are mega sensitive, it's easy to accidentally make a note sound more than you wanted. But that could be my crap technique
The pedals do the job ok but you can get a lot of double kicks when you only want one kick. The pedals are the weak point of this kit I think. I modded mine by stuffing the inside with some firm foam and mounted the pedal on a small wooden board, works perfectly now.

The pedals are just on/off switches, not sure on the hi hat as I have only just got one and still getting to know it.
