- Hi all! I'm preparing burritos in this episode. The video starts with some breakfast service, and the first half of the video is prep, the second half is service.

My friend here in New Mexico makes her breakfast burritos like you but she puts the egg down to cook like omelet, flips puts cheese and fillings then tortilla. The whole thing kind of melts together then Pico De Gio lettuce tomatoes and green chili are served on the side

I've watched a bunch of these and how is it that you never break a yoke? The breakfasts look great (except for those beans!). If I had access to this kind of breakfast everyday I would weigh 50 lbs more!

In the canteen, there are multiple lines and they give their menu pricing to the cashiers. So you order food from one of the lines and then check out with the cashiers.

As someone from the southeast US (Georgia) I have been introduced to foods in various ways that I would never have thought of…or even tried…beans at breakfast…hot dogs for times other than dinner. Do you add vinegar to the poaching water? If so, how much, please? I love poached eggs. I have my own free range hens. They are fed organically, so their eggs are fresh and gorgeous - but I end up spoiling them if I poach as I seldom get it right! Your eggs never seem to fail! Help!
