INGREDIENTS:
🔹2 large eggplants
🔹Kosher salt
🔹Extra virgin olive oil (I used Private Reserve Greek EVOO)
FOR SPICE MIXTURE:
🔹¾ tsp allspice
🔹¾ tsp coriander
🔹½ tsp paprika
🔹½ tsp ground cinnamon
FOR THE FILLING:
🔹1 cup dry couscous I used this one
🔹1 cup canned or cooked chickpeas drained
🔹1 Roma tomato small diced
🔹1 green onion chopped
🔹Handful fresh parsley finely chopped
TO SERVE:
🔹Tahini sauce per this recipe

I look forward to learning more about the Mediterranean diet after suffering a heart attack and bypass surgery a couple of months ago. I've always enjoyed cooking which is not typical for a man but I've mostly learned to cook very unhealthy things. Just recently I discovered the joy of Turkish cooking. From what I have been learning the best food in the world is in Istanbul, Jerusalem and Cairo. Heaven help me. Its like I deeply live my wife yet I am attracted to every other food which is nothing but sinful pleasure.

Is this recipe nicer with fresh parsley than fresh coriander.. and is it pure Tahineh you use
or is it Lebanese Tarator sauce (Tahineh + lemon & 1 tsp water + 1clove garlic)!?.. Thanks

Yes it is
You should have: a) make cuts on eggplant when soaking it in salted water (this way it takes about 10 minutes to get the bitter taste out); b) remove the body of each eggplant, leave only the shell and then mix minced or cut eggplant body with your filling - otherwise a very nice recipe!
I also do it like you said but I eat cheese so I sprinkled it lightly with Parmesan, then place it under the broiler to melt the cheese and let it browned.
