I started exclusively eating sourdough bread during covid, but one thing you mentioned really clicked. When I am making a dish where bread is a supporting character, this would be really great. Sourdough would overpower and wouldn't be a neutral base that absorbs more flavour

Exactly!! Like sourdough is great! I love it! But imo it tastes so weird in stuffing. Like so sour it’s not nice.
