Old cheese... Nice. When my wife does a Dutch shop (we're in the UK) she often drops a chunk of Old Amsterdam in there for me and it never lasts as long as it should do. Talking of which, we had a delivery yesterday......

To make it more of a sauce, need to add melting salts or a slurry of cornstarch or flour. Maybe some lemon or lime juice to help keep the cheese from clumping.
Just a tip, recipe on your website misses tomaten passata in the ingredients and howto ;). So I will need to go on the visual 'potteke' that you're using in the video :-)

FYI if you can't get imported mexican cheeses where you are, a low moisture mozzarella is a close approximation. Cheddar cheese is not used traditionally except in the north / SW of the US

Yup. Definitely a hopper fire. Ive got the identical grill from a different company. Dont go from a high temp cook to shut down. Step it down to a lower temp first.
@@thespankster83 yeah have to always check that hopper for obstruction. Wrong type of pellets can cause that.

This is more of an alambre or a fundido more than a dip or sauce. To make a cheese sauce you need to incorporate evaporated milk and cheese together in a bowl over a double boiler

Yes. Ive made this in the oven and it isnt the same. Same results with chex mix too. Smoked is better.

Old Amsterdam is not old cheese, it's belegen with some aditives so it ripens sooner (8 months ripening period, too short to be real old cheese)
And it's not from Amsterdam either, it's a Gouda cheese made in Huizen (so not Gouda either)

Old Amsterdam is not old cheese, it's modified to taste old but it's not. I'm not saying it doesn't taste okay but really over age like Reypenaer is loads better.
Nice video once again! Pro Tip: use block cheese and shred yourself. If you buy pre-shredded cheese there are agents in there that will make your queso clumpy and not smooth. Trust me it is a game changer. And that you for not using Velveeta! 😆

There's a real process to uphold. Vs just views. N what-not. That did to me looks like microwaved Napolitan dynamite/step brothers style nachos. To greasy. Clean it up. Then try again.
