Filipino Street Food, Alcohol, and Pig Faces: Chef's Night Out in Manila

- We head to Manila, the capital of the Philippines, for this episode of Chef's Night Out. Justin Sarabia, the chef and owner of Rural Kitchen of Lilliw, Laguna, cooks food influenced by his lola's (grandmother's) cooking. Justin and friends head out for the night in Manila, beginning at Nikkei, a restaurant that serves Peruvian-Japanese cuisine, and then on to a speakeasy called Alcohol by Volume, a pregame to the one of the best parts of eating in Manila: street food. After lots of street food enjoyed with beer and gin, Justin heads back to his restaurant to cook sisig, a Filipino favorite made from pig's face. While the food in this Chef's Night Out is great, it's really the ride in Vin Diesel's Jeepney that sets it apart from the rest.

This was a really good episode. Finally some real people who's not trying too hard but could still show good food, people and keep it interesting without being cringe worthy.

In addition, there is nothing wrong if non-native english speakers speak perfect english as long as it's not detrimental to society. you're talking about elitist but here you are, judging people based on how they speak.

+tzaunie Firstly, your "cartoonish English" comment definitely highlights some mockery of those trying to speak the English language. Secondly, we don't even know these people beyond seeing them on the video. Thirdly, being sensitive to the arrogance of socialites is an interesting reason for insulting those who have accents while trying to speak English.

Man it's amazing to see filipino cuisine getting recognized more and more. I mean all filipino food needs is a platform to show what it can offer the culinary world and I guarantee you it's the next thing to 'blow up'. Really good to know Munchies is putting Filipino's on!

+14Krosh American crime rates are higher than Manila because the Manila police are part of the criminal underworld. Only around Wall Street in NYC do I see men in body armor with assault rifles. I see men with assault rifles or shotguns and no body armour, all over Manila. Many malls have armed guards with metal detectors, who scan you before they let you in, like inner city schools in NYC.

out of all the Asians Filipinos speak the best english
I would say Indians , Nepalese and Bhutanese people speak English equally if not even better.
I forgot the Singaporeans and Malaysians too. They speak fluent English too due to their history of being colonized by the British.
If you think about it, the ability to converse in a European colonial language is not really something to be proud of. The reason why Chinese, Japanese, and Koreans are unable to speak more than their native language is because they were never colonized by white Europeans. They were invaded and fought hard wars with countries like the U.S. And Russia but never long enough to learn the language of the oppressor.

Spoken like a true Patriot
Pinoys and Pinays are some of the coolest people i've ever met. They use to always say crazy stuff like, they're really looked down upon in the asian community etc...which is why they would emphathize with black americans. They'll always be cool with me even with all the so called crazy stuff they eat. I've actually tried to eat geninue Philippines Balut before and it was definitely a texture thing I had trouble with like the Director said. However pork adobo is awesome!!
Proud baby of Manila! Actually had chicken ass for dinner just a while ago. Kudos to you Chef Justin and Munchies for putting the spotlight on Filipino cuisine, especially our street food. As an aspiring culinarian like you, I have goals of putting up my own resto here in Manila. Mabuhay!

this is what being filipino is all about doesnt matter if you lived the good life by being rich or being born right in the slums. but food brings everyone together. that is why the lola's (grandmothers) are so important here for us because they can cook one hell of a meal.

Where the frick do you live that you can't get ethnic cuisine? I grew up outside NYC and there was one Italian restaurant and that was foreign food. Or you could go get pizza cause my Mom didn't cook anything foreign and weird like pizza. We ate steak every Sunday and that was supposed to be special. Then in the mid-70's suddenly, there were a lot more oriental restaurants. Now we're inundated by Eastern European, Middle East, South American, Indian and Caribbean restaurants, all with their own specialized ethnic fare. I am nostalgic. I want to live where you live.
These are easily my favorite Series on Munchies. The Pink Zebra in SF was SO GOOD! Please keep doing these VICE!!

The guys are of upper middle class filipino families but they know their shit, they know what's dirty and what's classy, but not staying on one side, real people, mabuti naman, i thought all they gonna show was all these western type of restaus in the makati area

Great episode, I loved the chef's ambition and drive. He definitely inspires others around him. The cultural and family aspects of the show were very personal and real. Again, great episode #munchies.

I used to think Filipino cuisine couldn't be that good, because there's not a strong number of Filipino restaurants. Until I tried it once, it's actually damn good. I just couldn't figure out why there aren't more restaurants.

Most Filipinos prefer home-cooked meals than something out of a restaurant...
I'm Filipino and I think the reason why there aren't very many Filipino restaurants is because Filipino food is difficult to market. There aren't many "trendy" Filipino restaurants. And the "trendy" restaurants typically don't have the greatest Filipino food (speaking generally of course). That means the really good Filipino food is in the hole in the wall, small restaurants. It's a rare sight to see non-Filipinos at Filipino restaurants. Hopefully Filipino culture can spread our more! :)

Another tip if you're going to Manila: There are 2 places (streets actually) that are known for an abundance of restaurants. One is Maginhawa Street in Quezon City and the other is Aguirre Street in Paranaque City. Both have a suburban vibe when it comes to the atmosphere but each street also has unique restaurants that you won't see anywhere else in the Philippines.
I honestly never knew this restaurant exist 😂 geez can't wait to go back
