- On this episode of Munchies, we visit Jeepney, the bustling restaurant in New York City's East Village, to learn what Filipino cuisine is all about. Then we hit the town with head chef and owner, Miguel Trinidad, and his business partners, Nicole Ponseca and Tomas De Los Reyes.
First, they take us over to their Chinatown staple, Nom Wah Tea Parlor, where they spend every New Year's Day. Nom Wah's owner, Wilson Tang, teaches us about the finer points of eating soup dumplings and a little Chinatown history. Buzzed off of pork broth, we head over to hang with Jeepney's neighbors at Ducks Eatery, where we sample the goat's neck with shots of potent homemade Mezcal.
The crew from Ducks Eatery joins us for a nightcap as we stumble over to the bar Pouring Ribbons for world-class cocktails and some hilarious stories from their colleague, Topher Chung. We finish off the night with a leisurely stroll back to Jeepney, where a whole set of friends is waiting to crush an epic Kamayan feast. Enjoy!

Munchies may be favourite consistent Vice series. I'm a foodie, what can I say. Anyway, Filipino food is criminally unknown in North America. It's weird to a lot of people, but I ADORE IT. There's no other cuisine quite like it, anywhere. They know how to cook pork and fish REAL WELL.

Balls are actually much lower temp than other body parts. They hang low to protect the sperm cells from heat (which kills them).

I'm from Bicol region in the Philippines and also a chef for 25 years plus, I cook Filipino food at home everyday for my family. What I've seen here ia a fusion of Pinoy cuisine,yes you can roll the Bicol express and roast it in the oven as long as you have that chilli and coconut -ginger sauce with balaw (shrimp paste).There are so many version of Bicol Express it depends where you from in Bicol.

This was one of my favorite Munchies episodes! Beautiful and authentic (food and behaviors ; )!
The Bicol express is chopped chillies in coconut milk with pork bits. He really took the liberty of making it completely different. He's a good chef though.
That is exactly what I remember Bicol Express being. Little bits of pork in coconut milk with chili peppers. When I first ate it, there was no Bicol Express Fast Food Chain. The maids made it and I thought it was pork in cow's milk. My Jewish brother-in-law remarked that it was the most un-kosher dish thatcher had ever heard of.
Mexxron Fidds Im from Bicol Philippines, Daet region and I would like to clarify that the Bicol Express is cooked in more than 5 ways. The most famous one is also called Laing which is technicaly all those ingredients grinded together then wrapped with Gabi leaves and topped with warm coconut milk sauce.

The one Jeepney made is called a Gabas roll which is common in the Pili region of bicol.
Mexxron Fidds Bicol express is cooked into ones liking as long as it is cooked in coconut milk(pure coconut milk is much better) and chilli pepper(red hot).

It's interesting to see how food is carried on through different generations. Jeepney may not feel traditional but it nods with respect to the culture that inspired it's food.
An awesome, personal look into the lives of folks who are just doing what they love alongside people they love. Doesn't matter if this is in NYC or some small town out in Kansas; this was a great episode. And it made me very hungry.
When I heard, "....this is called a Bicol Express...." Whut?? Filipino dish in Manhattan was really 🔥 fire. Nice one Vice.

nyc has the most diverse and delicious food on the planet and it's one of the two things i loved most about nyc, the food and live shows- music and art and everything in between. i hate to say it but i miss new york!
man im filipino and i fucking love vice and when i saw this episode I knew it was going to be epic before watching it, the kamayan at the end is always epic with friends and family just messing about,eating and joking..
then i saw the cook was dominican!>? Toinks guess we cant have an official Filipino cook our own damn food smdh

My favourite munchies episode!
Reason why Filipino cuisine is not represented well in the US is because of a couple of things:
1) Theres a large VARIETY. Filipino food has Spanish, Chinese, Indian, etc. in its influences. Look at Pancit. Pancit bihon, palabok, malabon, etc. Wikipedia lists 31 variations of a CHINESE influenced dish. How can you pick a few and have it represent Filipino noodle dishes?
2) Difficulty in cooking. Good Filipino stews like Kare-Kare take a while to make. You can't cook it fresh in a restaurant. It will have to be pre-made. It won't taste as good. How about Lechon? One of my favorite dishes is Rellenong Bangus. Look it up. It is delicious but INCREDIBLY laborious to make.
3) Filipinos like foods and flavors that mainstream Americans will probably not eat. Quite a few dishes are cooked in vinegar with sour and savory as the primary flavors. Theres also a bunch of exotic ingredients in there. Let's not get started on Balut.
The only successful kinds of Filipino food stores cater to Filipinos and not mainstream Americans. Going mainstream would involve a radical flavor and cooking shift that would make it "Filipino-esque" and not authentic.

this is so true!! traditionally cooking filipino food takes too long, and has a lot of exotic ingridients.
It bums me out, but you’re dead on. They opened up a Filipino restaurant where I live (Austin, Texas), and the dishes are so bland in comparison to the food my family makes. It’s still good enough, but you can definitely tell that they had to neutralize some of the flavor to make it more appealing to average American palette.

How about a little bit of word Etymology? Jeep refers to the American brand of vehicles used by the American Servicemen that were left in the Philippines after the liberation from the Japanese invaders. Filipinos being ingenious people thought that they can make a passenger vehicles by extending the chassis of the Jeeps. Hence the name JEEPNEY or in Tagalog/ Pilipino language, DYIPNI. I love how the owner put his own twist on classic dishes. Maraming salamat! (Thank you very much!)

Filipino food are influenced by Chinese, Japanese, American, and Spanish cuisine. Philippines has a diverse variety of food due to its rich history. Filipino Food will explode in 2017! Mark my words!
