Beet Fluid Gel

  • This super smooth beet fluid gel only requires beet juice, water, agar powder and some sugar. The texture is lovely and silky and for a thicker gel all that's needed is a touch more agar. Oppositely if you'd like a runnier consistency just add some water.

    I've seen other recipes for this type of fluid gel which look great and turn out really beautifully but I wanted to use a recipe where I already had the ingredients so that's why I used agar for this one.
    I play around with a few fluid gel plating techniques at the end. By no means is this all the ways you can use the beet gel to plate with I just wanted to give some basic ideas. If you haven't seen them, they are some pretty cool plating techniques that you can easily add to your repertoire!

    Thanks for your video. Can I use xanthan gum instead of the agar? Also, can you use it to to plate savoury dishes (without the sugar ofc)?

      I wouldn’t recommend using xanthan. You’ll probably end up with a kind of sticky gluey texture instead. You can for sure use this for savoury, just make sure the liquid to agar ratio stays the same but you can flavour it however you want! Also try using different liquids/ veg juices so long as they’re not too acidic they work pretty well the same. I’ve done carrot before as well and it looked really nice. Hope this helps.     On the video out says 25grams of sugar, then ANOTHER 2 grams of sugar? Is it supposed to say 25grams of sugar AND THEN 2grams of agar?

    I find the texture to still be rough after blending. Think KFC bbq sauce texture. I was using a 1% agar mix so 200g liquid 2g agar agar. Does it need even more blending? Or should I add some more beet juice?

    Does it go back to a solid if put back in the fridge to use the next day? How long would I be able to store it?

      Nope it doesn't! It will stay in gel form. I'd say about a week if it's refrigerated properly. :)

      For about 30 min to an hour, until the gel is set into a sheet 😊

      Normal gelatin, but it behaves little bit differently. And there is mo need to boil it.

    I wanna make an aji amarillo( spicy yellow pepper) gel but I can’t think of the right ingredients. It’s spicy but I don’t know whether or not to add glucose or sugar or just salt and make it into a gel. 🤔

      Agar is a seaweed powder that can be used as a gelling agent. It is commonly sold in Asian supermarkets.
      It's really tasteless on it's own, but has fantastic gelling properties.
      Only thing is that it needs to be boiled to activate it (so most people activate it separately) from what they want to infuse into it.

      Long time ago you asked that but agar agar is better than gelatine products because vegetarians, vegans, muslims and other people that avoid pork can eat that too. Agar agar is a very good alternative for gelatine.

      Yes! If you have a blender or food processor, blitz up some beets then strain out the juice using a sieve lined with either cheese cloth or a coffee filter. If you don’t have a blender or food pro then you just grate the beet on a cheese grater and strain the same way. You can also buy fresh pressed beet juice at a lot of grocery stores now!       gelatin doesn't hold up long enough it starts melting specially when exposed to heat.

      @@najithkahingala2345 The host does not recommend using Xanthan Gum as it produces a different result. Vegetable based gelatin would probably work instead of agar agar.
