CLEAR RED CABBAGE CHIPS - Beautiful Garnish

- Follow this recipe to make beautiful Clear Red Cabbage Chips.
Ingredients:
1/2 Red Cabbage
2 1/2 cups of water
4 tablespoons of potato starch
Oil for frying
Salt to taste - Jak na to + styl

Super dope....will the cabbage get translucent with just cooking the leaves on low?
I've made this chips in work few days ago. My cooks was so impressed by this and our customers loves it! I used them to garnish a dish: Pork tenderloin on roasted shallot puree with confit potatoes and green vegetables with mustard sauce. Absolutely stunning!

The dried chips can be saved for a good while in an airtight container away from humidity before frying. Once fried it is best to consume soon.

Before frying it is harder, if thin enough it can be eaten but if too thick it may be harder. It gets crispier and crunchier once fried.

Yes they can be kept in an airtight container. The dried chips before frying will keep for a good while.

Can you fry them in an airfryer instead of traditional frying?
I’ve never made them with an airfryer not sure whether it would work or not.
I wonder how well this would work if you boiled a cubed potato and then use the starchy water to cook the cabbage or whatever vegetable you’re using
It probably wouldn’t be enough starch to form the gel, but if enough starch is extracted it could possibly work. Potato starch water is great for thickening sauces and broths.
@@HomeChefSeattle it did actually work. I just boiled one russet in minimal water, use the handheld mixer to agitate the starches, then filtered it and blend it with the agar and water mix.

Is there a way to make them without frying?
They can be eaten without frying but will have a firmer texture and not so crispy. In that case is best to spread them out as thin as possible before dehydrating.

It is possible, but without frying they are firmer and harder in texture so make sure to make them really thin.
How many days concerved?
The dried chips can be kept for awhile in an airtight container, but it is best to fry them not too far in advance.
