Hello! Thank you for the lovely recipe ❤️ I follow your website religiously when I make sweets. As a novice I appreciate your instructions including oil and syrup temperature ! Please what oil temperature should I fry the boondis and what is the temperature for sugar syrup? Thank you 🙏
Hi Shila! Thank you so much! Honestly I have not taken the temp of either. The oil should be hot enough that the test drops come up immediately. I’d guess around 375-400 degrees Fahrenheit. The sugar syrup does not need to be at any temp. Once it boils, just let it boil for 1 minute and then add your boondis. Since you’ll be cooking the boondis in the syrup, the syrup doesn’t need to be at any “thread” consistency. I hope that helps. I will be posting a full detailed - with voiceover soon. Just wanted to get this out in time for Diwali 🪔 💕

I have been adding milk powder to the mix as well...can we add in this too...wil the texture change ... I. Mean will it get too soft or b ok.thanks
Do you add it to the mix before frying or after? Sometimes, I add dry milk powder to the mix after it sits in syrup and it works well. It does make for a slightly softer laddu though
After mixing with syrup...as I haven't done this method...I always fry boondi n blend a bitcn den just add in syrup til soaked n leave for couple hours...den add in other ingredients n bind

Your method works really well too! I’ve done that in the past too. I’ve shared this recipe for anyone who may struggle with the sugar syrup portion, which seems to be a common question for me.
