What a lot of people don't know is the khao soi was originally a Muslim food, which is why still it is only served with beef and chicken originally.

Actually Koa Soi made from wheat flour, not from corn flour. The lady said kaosali in Thai is mean wheat but northen dialect means corn ...so its just misunderstand btw Thai - Kommuang(Northern dialect) and English

As you in Chiang Mai, you have to check out the village call Ban Yang ( บ้านยาง ), Maengon Subdistrict (ต.แม่งอน). It’s a village that have 3 religion that live together peaceful Christian, Muslim, Buddhist.

ข้าวซอย is Burmese language ခေါက်ဆွဲ

etymologically ခေါက်ဆွဲ in burmese does not have the exact meaning as 'noodle', while in thai ข้าวซอย means rice (ข้าว) that is chopped in to small thread (ซอย )
