    Recipe
    Makes one 9-inch (23 cm) pie
    Serves 8 to 10
    Ingredients
    Crust
    1 ½ cups (270 g) chocolate cookie crumbs
    ¼ cup (60 g) unsalted butter, melted
    Chocolate Cream
    5 oz (150 g) semisweet chocolate, chopped
    2 Tbsp (30 g) unsalted butter, cut into pieces
    1 tsp (5 mL) vanilla extract
    ½ cup (100 g) granulated sugar
    3 Tbsp (22 g) cornstarch
    ½ tsp (2.5 g) salt
    1 1/4 cups (310 mL) 2% milk
    1 ¼ cups (310 mL) 18% cream
    6 large egg yolks
    Topping
    1 cup (250 mL) whipping cream
    2 Tbsp (16 g) icing sugar, sifted
    ¼ tsp (1 mL) vanilla extract
    Directions
    1. For the crust, preheat the oven to 350 F (180 C). Stir the cookie crumbs and melted butter together until evenly combined and press this into a lightly greased 9-inch pie plate. Bake the crust for 10 minutes, then cool while preparing the filling.
    2. For the filling, place the chocolate, butter and vanilla in a bowl with a strainer placed over it. Whisk the sugar, cornstarch and salt in a medium saucepot. Whisk in the milk and cream and then the egg yolks and then bring this up to a simmer on medium heat while whisking constantly, until the mixture just begins to bubble and is glossy and thick (once it starts to thicken, it happens quickly.) Pour this through the strainer over the chocolate and butter and whisk until the chocolate and butter have melted. Place a piece of plastic wrap directly on the surface of the filling, cool to room temperature and then chill for at least 4 hours to set.
    3. Once chilled, stir the filling gently and spoon this into the pie shell, spread to level it.
    4. For the topping, whip the cream to a soft peak and whip in the icing sugar and vanilla. Spread this over the chocolate cream and serve.
    The crust and chocolate cream can be prepared a full day in advance, but the topping should be made within 4 hours of serving.

    I always poured the hot chocolate cream mixture into the pie crust & then let it cool...how interesting that Anna cools/chills the filling before construction the pie! What a cool idea!

    My bfriend is a chocoholic. Chocolate cream pies are the only pies he'll eat, this one is amazing! I love that it doesn't require tempering the eggs. I like to drain the yolk from the sac, though. I also used a mix of Ghirardelli and Costco semi-sweet chocolate chips and it still had great taste and texture. Thanks Anna!

    I made this for a get together. Normally, I'd pick up one of "those" you cook pie fillings in a box as they were pretty reliable. Well, it was a hit! Everyone thought that I went to the bakeshop a paid big bucks for it.

    My late grandmother always made my sister and I homemade chocolate cream pies for our birthdays every year. She was a master baker and could make just about anything. Everything was from scratch; the crusts, the fillings, the toppings, etc. She used a standard pie crust and meringue topping, rather than a cookie crust and whipped cream, however. I haven't had one since she passed in 2010, but I might make this for the holidays this year to see if it brings back any memories. :-)

    I made this and it tasted great! I had some problems with the crust. Next time i would double the melted butter for the crust and really make sure the crumbs are pressed into the pie plate. For me it fell apart. I used Oreos so not sure if that was part of the problem or not.
    Also the filling comes out more like a mousse. I wasn’t expecting that, I was expecting more of a pudding texture but it was delicious.

      Heavy cream you get at the supermarket, can be called fresh cream or heavy whipping cream also.

      It is the milk fat content, like how the milk is 2% milk fat. I think the cream is also called table/fresh cream and heavy/whipping cream is 35% depending on what country your from.

      These comments are correct! Just look for the percentage of fat on the label and you'll be fine!

    When you say 18% cream are you saying to use whipping cream instead of *heavy* whipping cream? Out of the 3 brands of whipping cream I've purchased not one of them has had the % on the label and I have no clue how to go about finding that info out...

      On the box says. You can find them in Walmart y many markets. Try Traders Joe, , my favorite store and you will find many things.

      cantandosirena1 hmmm, one of the brands I used was the one from Walmart. I didn't see anything that showed the %. I've always used Knudsen's brand (which again doesn't show the %) but decided to try out the Walmart and Target brands just recently. The only thing I saw on the Target carton was the 'milk' fat %. Out of those two brands I did notice that the Target brand whipped up and held its shape far better than the Walmart brand (I couldn't believe how long it took to whip up. At one point I didn't think it was going to). I'm really happy about that. Now I'll be able to buy 2 LG cartons of the Target brand for the price of 1 Knudsen. Gotta save those $$ anywhere you can, lol...

      @@luv2luv720 Oh, I don't, lol. Sorry you can't find it either but if you're in the states Target's brand is great and MUCH cheaper. If you're in California and you have a Staters Bro's near you their brand is good too. I'll always use Target's if I can but on those off chances that I can't get to one or they're out of stock (yes, that's how popular they are) Staters brand is what I'll buy over any other out there.
