- Maesil extract (Maesil-cheong) is used widely in traditional Korean cuisine as a sweetener. It's made from maesil (aka green plums) and makes many dishes much more delicious than if you just used sugar. The result is more flavorful, fragrant, fresh, and complex. Maesil is also known to be really good for you, and Koreans believe preparing food and tea with maesil has many health benefits.

Maesil (Korean green plum) typically has its peak season in late spring to early summer. Check out a large Korean grocery store in may or June.
Find a farm that sells plums and visit in early June, asking to pick up any of the "drops" that fall off the tree. Today, June 12, 2024, I'm out gathering tons of them from my tree in Michigan.

For the purpose of the video you have to be especially careful to not contaminate anything so the plums do not rot. If they do so you're hard work will be wasted in the conclusion of mould growing as you are not fermenting it.
I am blown away about how far these plums' flavors can be stretched out across a whopping four different processes from one and the same batch!
The camera person loves to film blurry!! A lot of the videos are like that!! Makes me not watch, all the way through!!

I really enjoy how traditional Korean cooking really takes advantage of everything, like traditional cooking usually does. what if everyone still did like this and used all the resources?! we wouldn't be throwing away so much food for sure!

Every year, my mom makes it like a huge bottle of it (maybe 10 times bigger than the one Mannchi used) and uses it when she cooks or someone has a stomachache lol

My mom made it annually. my grandma always also do.(For my mother)
Its really good at stomachache. When I fall in love with toilet, my mom give me maesil-cheong hot tea instead of medicine. really good work. And It is the best option to quench our thirst. Its best drink for me. Hot or cold whatever.

My family do this every year. We will always have big bottles of plums lying around the house during this time of the year. it takes a long time to make, but it's worth the wait.

아래에 있는 설탕은 다음에 매실청 담글 때 사용하면 되구요. 한구에서는 매실이 소화에 도움을 줘서 거의 모든 가정에서 담그는 것 같아요. 대단하십니다. 거기에서도 매실청을 담그시니까요.

Thank you for this video. I'm in Korea and see maeshil growing in my area. I asked everyone how to make jangajji and no one knew how. So now I'm excited for a 100 day (or is it a 200 day) project. I have made maeshil-cheong and maeshilju before, but jangajji is too expensive to buy in stores. This is great!

Well our green plums are in season here and at my parents place, I will go and collect them again, I tried making Japanese umeshu, but saw a recipie that needs Maesil Cheong before and this gets three things out of one harvest!
