Excellent tip yung use everything cold! Super ganda ang texture ng longganisa pag malamig lagi. Mix until thr meat becomes tacky, if possible, only in one direction.

I just made skinless longanisa without using curing mix, or anisado. , just black pepper, salt, brown sugar, paprika, a little bit of apple cider vinegar or calamansi and plenty of garlic. Just mix it well and make sure the mince pork is fresh., My son loved it so much.. No preservative at all.

Gumawa ako ng longganisa yung recipe ni panlasang pinoy. Himalayan salt gamit ko at may paprika pero hindi ganyan kadami ang fats dahil vegestable oil ginamit instead of fats.

Mas makukuha mo lasa ng skinless longganisa kung lalagyan mo ng paprika 1tbsp sa kalahating kilong giniling. Actually kanina lang aq gumawa at masarap siya. Yung sa kanya kasi simple lang tlga.
