- Knife sharpening with the Edge Pro Apex is a very simple process. Our simple design is extremely effective at keeping the angle between the knife and sharpening stone consistent eliminating the biggest obstacle of traditional freehand sharpening. I’m new to sharpening with the Apex from this spring and having a blast. Way better than any other systems I tried and none of the anxiety. What I did right was picked up a few “decent” knifes from garage sales for a buck or two each and they really helped with honing slow and deliberate muscle memory. Helped with feeling the burr’s too. What I did wrong was taking the time to make a space for it in the garage cupboards. Still have it clamped down on the work bench from day one. Can’t say enough about the great service and advice.
Glad to hear that Mike! Picking up some knives from garage sales is some solid advice. But "decent" is the key word there - not total junkers.
@@EdgePro In Eastern NE a fair number of garage sales are more estate sales. Was able to pick up what could be considered heirloom quality blades in US and Japanese steel from last half of the 1900’s but the wood and rivet handles were past a useful life (likely due to proliferation of automatic dishwashers post purchase). Time saver tip on garage sales…. Lots of kids garments and toys keep driving. Any tools/hunting/fishing/boating stuff worth a stop. A couple tables of kitchen ware and a large sale should stop. Estate auctions are great winners but rarely had the time to wait for its turn on the auction block.

What’s the best stone for a filleting knife ? Also what angle ?
For pocket knives and smaller fixed blade knives, it would be nice if there was a clamping option to hold the knife in place.

Benoit, great question and sorry for the late reply. The small knife attachment is good for knives under 3" that are also narrow (short distance from spine to edge). The slide guide is good for small - medium sized knives that you are going to keep in one position and sharpen the whole blade without moving. Unfortunately the 2 are not compatible with each-other (yet).

Can you offer some tips on sharpening a "parrot beak" small kitchen knife please?
The challenge that these knives present is that the standard sized stone can be too wide to fit inside the curve. For this reason we have a narrower 1/2 inch stone. @@EdgePro yeah! You're absolutely right! I no longer live in Oregon or in the US for instance. Do you ship to Brazil? Or how long does it usually take to send it to NY?
@@fornalli Yes we do ship to Brazil. We can also ship to NY. It only takes a few days to get a package to NY. Shipping a package to Brazil is a little bit of a crapshoot this time of year, it will get there it just takes a little longer and sometimes runs in to delays. Could take anywhere from 1-3 weeks to arrive. But we have them in stock so there will be no delay on our end.
When you say 21 degree setting, do you mean per side? Or is it overall angle of both sides?
That is 21 degrees per side. This is a general recommendation. It works great most of the time, but of course there is always going to be exceptions. Thick knives you would probably go higher, thin knives you can go lower (more acute) if you want sharper. But there is always a trade off, when you go lower and get sharper the edge is less durable.
@@EdgePro I have some Japanese knives that were sent from the factory at 10 degrees per side, not sure if I could use this for those.
@@dan27052 Yes you could. The Apex adjusts down to 10 degrees. I would recommend double checking the angle setting with a sharpie before sharpening that knife though. 10 degrees is extremely low even for a Japanese knife. Watch this video for reference: czcams.com/users/shortsfMa-eagYML4

Edge Pro, the suction cup design is terrible, same with the vacuum style on the professional model. This is a big factor when comparing it to TSPROF models. Also, I wish the Apex came in all aluminum like the pro model and with a heavy base option or have a clampdown base as standard. Anything plastic will not withstand time. For the price, I'd like to think I'm buying a sharpener I could hand down to my grandkids, but not with these materials. The swivel on the Apex is still the best design though.

We do have a bench mount available for the Apex which allows you to clamp it down to a work surface. www.edgeproinc.com/apex-model-edge-pro-system/apex-bench-mount/ .When the Apex was designed it was intended to be light weight and portable. The vacuum base for the Pro model is surprisingly strong, but does require a smooth surface. I do understand your criticism though, I got something in the works I think you'll like.

Knife steel nerds claim the lower the angle the more durable the edge
I have heard this claim as well. I think for an advanced sharpener with advanced deburring skills and high quality steel their could be some truth to that.
As I understand it the edge retention of an edge sharpened at a lower angle is better when using slicing cuts.
