    What a great fun video!!!!! Now that's what I call a teamwork homemade tomato sauce. I bet your kitchen smells wonderful. That food processor/juice extractor is impressive Logan. I can smell it from here in Illinois. Awesome job.👍👍

    For safe canning you need to put either citric acid or lemon juice in each jar.
    Also stop cranking the lids on so tight, just barely tighten hence finger tip tight.
    If you crank the lids tight the air can't escape and you risk buckling the lids.
    Don't put hot jars into or on a cold metal pan that's a good way to get stress fractures in the jars, they could break immediately or in the canner
    I've been canning over 50 years and rarely have failed seals or jars spoil when I follow the safety guidelines I stated above.

      It doesn't look like they put them in a canner or hot water bath. They may just let them cool as they are, and that pull the lids tight as the air gap cools, creating a vacuum, like in jam.

    Used to do it that way. Now I use a food processor or a blender, grind up skins, seeds and all. Makes a nice sauce and seeds and skins grind up and are unnoticeable. No waste, more sauce.

    I've seen some homesteads that take the leftover seeds/skins and put them through a freeze dryer and then blend them up into a tomato powder than can be used to add tomato flavor to dishes or soups.

    If you put all of the tomato paste into a large bowl then add some of the sauce to it, whisk until smooth then pour back into the main pot, it mixes easier and you don't end up with lumps that are hard to break up

    I have a few kitchen tips. Our family does not like chunky sauce. I simmer our tomatoes. I clean a half a dozen sweet vidalia onions. I clean a dozen bell peppers. I put 3 of the onions cut up in my blender. whirr whirr whire. It's like a liquid onion soup! Then I pour that in the tomato sauce. I do that with the tomatoes and red bell peppers. That avoids having to cut them up and cook them separately. Once pureed in the blender they cook with the sauce.
    Vegetable stock. Again the blender. I get a half gallon of clean water in a pot. I get the blender and I put in a couple of sweet onions and puree them. I get some bell peppers and do the same. That blender literally minces stuff so small it's great. Then I empty the blender and I get out my celery. I chop off the top and bottom. Sometimes I run my knife down the back of the celery to skim off a few stringy lines. Then when I have 10 or so , I shove them in the blender and whirr it and it makes celery puree. I dump that in the water also.
    Now you can just simmer all those juices and also add whatever you want. Salt, pepper, other spices... No need to run to the store and buy vegetable stock. You can make your own cheaply at home with no additives. Especially if your nice crisp celery starts to go a bit limp and isn't fit to put cream cheese on for a snack tray. Make your vegetable juice and I often just put it in bags and freeze it for later use.
    Also, I cut open bell peppers and take out that white seed skin. I have a good brand new toothbrush that I use to wipe out all those seeds into a bowl for the garbage. It's a small time saver so you don't have to flick each little seed out with your knife or fingers. Wash the toothbrush in hot soapy water, dry it and into the kitchen drawer it goes.
    Each year I make about 3 dozen pint jars of pizza sauce. I give some to family members rather than buy that canned stuff in the store.
    I talk a lot sorry. Boil some rotini. Add in some pizza sauce. Add cut up pepperoni, onions, peppers.. anything you want.. Add cheese. Bake... rotini pizza bake... no crusts!

    Outstanding video! You made a great point Logan about tomatoes. Don't ever throw one away because of a bad spot. Some of the best tomatoes I've ever eaten had a bad spot or two. Just cut those off and enjoy. I'll guarantee you can't buy tomato sauce that good.

    Wowww…this brought me back a few years! I haven’t made the sauce like my mom used to make in Italy, since my hubby gave the tomato machine to someone, I assumed a neighbour, who came knocking at the door and asked if we had a tomato machine he could borrow. It was never brought back and hubby doesn’t even remember who it was he gave it to. I was angry enough to bite him! 😡 It was a Holy Grail for me, my mom gifted it to me before she passed and was an expensive Italian one too. Haven’t made sauce since… It was new to me to start with raw tomatoes, we always cook them and drain excess water. I loved everyone in on this and Sami giggling behind the camera❣️ Take care…👋🏻

    I'm glad to see young people preserving food. I dehydrate my tomato peels for tomato powder. That powder is what I use to thicken instead of adding tomato paste.

    With how long that cooks I definitely would build a contraption and cook with wood or charcoal. A lot of gas was used there. Great video 👍👍.

    Nice video lots of work but I like the way that machine works. I usually cook mine, add the Tomato Paste then put them through the food mill. I really make small batches so the food mill is OK for me, then I freeze mine. I was under the impression that you had to put the jars in a pot then put water then boil them for a while thus is why I put mine in the freezer. For this year I am done, no more room. I have to say that oven is so clean, do you guys ever use it. I say this because I am trying to get mine cleaned up a bit. Cooking with Cole and the Family might be another You Tube Channel.

    Tip take some of the hot sauce out of pot and put all paste in a bowl put sauce in with it mix it with a mixer and pour in back in pot.

    Making sauce here also from my own plum toms. I cut them and cook until soft, then pour it into a Foley Food Mill and let the watery stuff go down through. Move the paddle slowly backwards to get more water out. Then move the mill to another container to continue the milling process. This gets rid of a lot of the water and lessens the cooking them, and I do not add paste. When it is nice and thick I might season it then, or wait until I use it. I generally freeze it as I do it in small batches, so water bath processing would not be very practical for small amounts. I noticed you did not process it, must be no one has died yet! As for that watery mixture- I do not save it. It could be if anyone wanted it for later use. It is mostly water anyway. Lotta ways to skin a- hmm- tomato!

    Useful hint… Open both the top and bottom of the tomato paste can and push the product out one end….gets 100% out.

    Or you could use a Vitamix and run the whole tomato seeds, skins, and all on high speed for 5 minutes and it literally pulverizes everything to a consistent viscosity and much easier clean up and much faster processing. Then pour them into ice cube trays and freeze dry them to later freeze dry them into tomato paste powder.

    I worry when things are canned this way. Years past, heirloom tomatoes usually had high enough acid. The new hybrid varieties usually don't. That's why bottled lemon or lime juice or citric acid is needed. Also, since you don't know the acidity, the jars require water bath processing fot at least 20 minutes for quart jars. Botulism is a nasty creature.

    Fun video..can you ask your grandmother why the peppers and onions weren’t ground in the same machine as the tomatoes?? Seems like it would be a LOT faster than a stick blender. Is there a special reason ?

      That machine juices the vegetables and we don’t want that. We want to grind down the vegetables so that they and small bits within the sauce.
