Ugh, these are always just the most interesting new tidbits of worldbuilding and campaign talk. Like what? Making it so excellent! I can't even now!
I was chatting with ChatGPT-4 about a mimic town and it came up with 7 different unique, themed taverns, since the tavern building, the furniture except for the beds, and all the plates anc mugs and utensils were all mimics.
But these were good mimics who grew sentient together and learned how to subsist on gold pieces and money as a form of food, so it was only interesting and not terrifying.
Point being, they could rearrange their form to look like anything, so one tavern one day looked like a Dwarven tavern with accompanying foodstuffs, one day a Goblin tavern with a fun game goblins might come up with.
It was very interesting and I hope I can run this whole town for a group one day.
Culinary identies is one of the first things that I thought about when running my Eberron. Thank you for more inspiration.
Bottom line, just have a lot of fun with it. Same applies for the owner. For example, I made a Dwarven battle-hardened retired adventurer. She's friendly with everyone but even more friendly with dwarves, calling them brother or sister. The more life you give the taverns your players run into, the more memorable it will be rather than, *Generic Tavern* "I'll just order an ale and call it a day"

Thank you for the content you do. I'm DMing my 1st game next month and you gave me so much inspiration (and ngl, straight up stuff to coppy 😅) on how to polish my world and give it more depth.
Another interesting thing to consider is how a species physiology might affect their cuisine.
Without the need to sleep, would elves have the same notion of mealtimes, or different types of food at those different times? Or maybe that leads to favoring a constant series of small meals/snacks that might be reflected at one of their taverns.
How would the dwarves' resistance to poison affect their cuisine? Is the human adventurer in a dwarf tavern going to have to worry about getting sick from the fermented rock moss?

2) I love the idea of creating interesting, distinctive taverns.
I'm already thinking of making Asian themed taverns that could be located by the water.
Or a tavern that's up in a tree like a Tree House Tavern.
