  • KIMCHI PASTE - is made by mixing all the seasoning ingredients such as Gochugaru or Korean Chili flakes, ginger, white onions, glutinous rice, garlic and fish sauce
    INGREDIENTS
    2 cups Gochugaru ( korean chili flakes )
    2 medium onions
    2 bulbs garlic
    1/2 cup glutinous rice flour
    1/2 cup sugar
    3 cups of water
    2 tbsp ginger
    1/2 cup fish sauce
    ENJOY COOKING!!!

    1. Can I make only this paste & keep into fridge?
    2. How long can I keep ?
    3. Can I use vinegar instead of fish sauce?
    I would like to use this paste as salad dressing .

      Hello..thank you for watching my video..Yes you can make paste only if you want
      Put the paste into an airtight jar. Cover tightly and store in the fridge until you're ready to paste up some veggies. Kimchi Paste lasts in the refrigerator up to 3 months.

      I have'nt tried vinegar in kimchi paste. Fish sauce is used in Kimchi making to accelerate the fermentation process.there are some substitute for fish sauce..you can use Soy Sauce which is made from fermented soybeans, water, salt, and wheat.

      i have'nt trief APF in kimchi..You can use either regular rice flour or glutinous rice flour 😊

    How long can it last? If I mix a big batch, so I don't have to mix it every time..

      Homemade kimchi must be kept refrigerated and will last for up to 1 month. Store-bought kimchi that remains unopened can be kept at room temperature for 1-3 months. If you have store-bought kimchi that's been opened, it will be good for 3-4 days at room temperature and up to 6 months when refrigerated.

      Kept at room temperature, kimchi lasts 1 week after opening. In the refrigerator, it stays fresh much longer - about 3-6 months - and continues to ferment, which may lead to a sourer taste. Be sure to refrigerate your kimchi at or below 39°F (4°C), as warmer temperatures may accelerate spoilage. Thank You for watching :)

    Why is my kimchi exploding and I have to keep putting it in separate jars???

      It is caused by a very active fermentation and an increase in the brine.As the kimchi ferments, it will let off gases that create pressure under the lid. Fermented Kimchi, much like champagne, has a tendency to pop and overflow out of the jar.thank you for watching 😊
