    America's Test Kitchen did extensive testing on poached eggs. Their best result was 167 degrees for 12 minutes followed by 1 minute ice bath.
    BTW I'm 56 and tried Spam twice 15 years apart and hated it both times lol. I just got a Sous Vide machine a few days ago and going to try eggs benny tomorrow.

    I think a way to balance the egg yolk would be too cut of the spam and arrange it in a way too make it so the egg just sits in the middle of it also maybe 167F for 13 min would be a good poached and if you dont want the egg white to be runny a quick dip in a pot of simmering water but not a bad video
