    These students are so fortunate! I had to learn all these tricks on my own😅! Chef Miguel was great for letting me try my experiments and introducing me to new stuff. Y'all are definitely getting a better version of him though! #lovelooksgoodonmychef

    Ok, that looks like it’s worth a try. Ihave been peeling off the skin after a bit of time cooking in the pan.

    Why not just use a knife? When is this ever the right way to do it? Even if youre on the river, had to have a knife to gut it. Ive seen too many escoffier videos showing awful butchering techniques. Where did their chefs learn this stuff? 😂

      I've worked as an Executive Chef and I can tell you this technique is super clean and leaves no waste. I've taught my dishwashers this, and they brag about how they are the best at doing it in the kitchen. Lol. To each his own. I know Cooks that live by the knife. Like I told them, give me a clean cut and no waste.
